I love baking. Decorating I'm getting better at. But for the life of me, I can't get (or maybe just find!) a good chocolate chip cookie recipe to turn out. Or It turns out one time but not the next. That's driving me crazy lately. This is me! I love to bake, but also can never make consistently good chocolate chip cookies. I usually end up making one really good pan and then burning the next pan, all within the same batch. If I make a cake or cupcakes I’ll use a box mix and then make homemade frosting. Usually a buttercream. I hate store-bought frosting. My MIL makes the best sugar cookies and I love the frosting recipe she uses. I don’t have it written down but I’m pretty sure it’s a stick of butter, a 2lb bag of powdered sugar, a tiny bit of vanilla extract, and then enough milk to get to your desired thickness.

I always make my cakes from the box as well. Way easier. I hate the canned frosting as well. I make my own- 1/2 cup butter, 1/2 cup shortening (or just use 1 cup butter), 4 cups of icing sugar and then 2tbsp milk to get the desired consistency. This is my favourite icing. Especially on sugar cookies.
I'm going to try those cookie recipes. Sometimes they are too hard, other times they are runny and soft. I want gooey chocolate chip cookies that stay like that for at least a day and aren't hard by the next day.

Cool dough and not hot pan is the key. And thanks for the icing recipe! I’m going to try it!

I’ve been up since 1:30ish (it’s almost 4.... H woke me up for sex and then just decided he changed his mind or something... what fucking ever... so now I’m feeling super self conscious about myself... I finally decided to get up and go in the living room. I’m making banana muffins (can’t find my loaf pan) and I open this thread and it turned into a baking thread... lol I have an awesome oatmeal chocolate chip cookie recipe... I also have a an oatmeal cranberry lactation cookie recipe... I used cranberries because if I ate chocolate it used to upset DD2’s tummy, I ended up liking it better with the cranberries.

My cupcakes were still gooey in the middle after like an hour and a half. I have no idea wtf I did wrong. I ate them anyways. Out of frustration. They still tasted ok. Was your oven up to temp? Or maybe too much liquid? I don't bother with homemade cakes. Box cakes are awesome. I like making homemade cookies and honestly don't get crazy with decorating anything. This reminds me that I want to make pumpkin cookies in the next couple weeks. It was a box mix and I did wait until my oven was up to temp, something I don't always do when cooking but do religiously when baking. I know over filled them a bit, but the directions said 20 minutes. There's no way a little extra batter made them that awful.

If you guys want to impress this year, the only thing I bake well is Better Than Sex Pumpkin Cake.
Box of spice cake mix, mixed with one can of pumpkin. Omit all other ingredients. Bakes according box times and temps. When it comes out take a skewer and poke holes all over the top, all the way through, while still hot. Pour condensed sweetened milk over the top. Cover and let soak overnight on the fridge. Frosting is whipped cream and cream cheese whipped together. Don't frost until you're ready to eat. Drizzle with caramel sauce and health bar crumbles.

Heading to my mom's today. She lives almost 2hrs away so it's a trek that involves too much planning. But its been awhile since we've gone so I figured we do it before baby gets here.
Plus, H is deathly allergic to dogs and hers died like 2 months ago so it's safe now.

My cousin’s wedding was pretty nice yesterday. We had a good time. It was kind of crazy though because everyone kept commenting that the next time we see each other, the baby will have been born. Eek.

Long night last night - we're still at the point where we have to wake the girls for feeds, except that after MON feed 1, A likes to eat almost every hour.
Newborn photos today. Hoping big brother will cooperate. Also hoping I can deal with wearing my maternity jeans (have been in soft pants this week).
Hard to believe it's only been a week since they were born!!

Spent all night dealing with cramping and contractions. Nothing super consistent but enough to be annoying that I couldn't sleep. Ended up only falling asleep at 3 and the kids were up at 6. So that sucked.

The past few years I decided I adore sugar cookies (sub at least 1/2 vanilla with almond extract), however, I do not have a frosting recipe that isn’t too thin or too sweet. The struggle is real and I end up just eating them without frosting. I prefer non frosted sugar cookies, so you can go ahead and share yours with me.
