What sort of veggies do you guys grill? We do skewers with zucchini, summer squash, cherry tomatoes, sometimes red peppers. We also grill potatoes in foil packets and also do the occasional grilled asparagus. Any other ideas? Brussels sprouts! Corn on the cob, if you count that as a veggie.

I just realized how much produce I have that needs dealt with before I leave tomorrow. So... I just riced my first cauliflower. I am freezing it but super excited to try it out when we get back! Next on the list fruit smoothie packets, pureed carrots and blanching green beans. Nice! I've never had rices cauliflower. What do you do with it? I've never had it either. Seems it is like a rice substitute. Basically a way to trick yourself that you are eating a starch! I have hear people talk of pizza crust and toast with it too.

Green beans in foil packs or a cast iron skillet. Lots of corn on the cob. We also grill jalapeño poppers if that's your thing.

I use riced cauliflower all the time, usually as a sub for rice.
For Mexican bowls, some meat- ground beef, salsa chicken, carnitas over cauliflower rice. Top with onions, cilantro, tomatoes, guacamole.
I also do a chickpea curry over cauliflower rice.
Or a Thai curry- so easy, cook chicken slivers in a pan, add Thai curry paste, onecan coconut milk, and a bag of frozen vegetables. Add a little salt and lime juice to curry. When vegetables get hot, serve over cauliflower, top with chopped cilantro and peanuts. You can use shrimp in place of chicken, but it goes in when veggies are almost done.

Asparagus is out big one, but I have no qualms about throwing pretty much anything on there. Zucchini, summer squash, onions, mushroom, and peppers are probably out second most common. We have a basket to we throw everything in.

I have no idea why it took me so long to find this thread!!!! I made zucchini noodles for dinner. They were awesome. The one year old is cutting her top two teeth. It has been crap for sleep the last two days.

Minerva my H is an ATC. I will be asking him about low impact workouts because we are sure I broke my foot this evening. I am forgoing the ER tonight because I can see one of his ortho doctors in the morning. When I get a good regimen going I can pm you what I am doing. I am so sad that I maybe not able to run for the next 6 weeks.

I actually ended up somewhat on track with my macros today, but so many shitty choices.
Tomorrow's breakfast and lunch are packed. I haven't decided how I will handle dinner yet. It's swimming night and we usually hit McDonald's. At least they have some better-ish options now.

I have 2 sick, lethargic, only want to be flopped on top of mom kiddos and a oh yeah, a infant who I am attempting to keep healthy.
Right now I feel like today will just be about survival.
I am thankful for Amazon video though. Girls are chilling and I snuck away for a few minutes of exercise and stretching. Here's hoping I can get it done before they find me.

I slept through yoga this morning and thought the day was lost, exercise wise, but my friend texted and asked if I want to do TRX at noon, so I am going to do that. Also, h and I are in desperate need of vegetables after this weekend away. I'm going to try to plan a couple of vegetarian meals to get us back on track.

Also, I spent lots of time this weekend with my relative who works in marketing for the junk food company and I have plenty to talk about. I was picking relative's brain for info to bring back to you guys.
It's disgusting. R actually said at one point about a certain project- they're competing with an option that is less expensive and better for you and R's job is to figure out how to get you (the customer) to pay more for the less healthy option.

I was chasing my kids around our front yard and rolled my ankle off the sidewalk. I went to the doctor this morning and the X-ray was down but the treatment will be the same if I have a sprain or a broken bone. I'll likely only be in a boot for two weeks. I have to be on crutches for a couple days. Then in three to four weeks I'll be back to normal. I will have an X-ray Friday.

I had almost all bad choices (except for supper) but I was way under my calorie goal. My house is a disaster because of my new couch coming today and my painting of the playroom and it's really making everything else hard. I'm hoping to focus on getting my house shit together and then my actual everyday challenge shit together.

I got so far off track with nutrition this weekend and now it feels like day 1 again with all of the bad cravings. I need this to motivate me to do better about resisting temptation on the weekends!
