As nice as it was to have leftovers available last week, I’m excited for other options. I’m planning simple things though as we get back into the groove of work and school.
Tonight: Pork carnitas, Mac and cheese T: Chicken tortilla soup and quesadillas W: spaghetti and meatballs Th: grilled chicken (planning on adding to salads for H and I) F: leftovers

We’re going easy this week. We didn’t do ham at all for Christmas, but H has been asking for ham & bean soup.
SATURDAY: chicken tender/mashed potato/white gravy bowls SUNDAY: I took cheese fondue, smoked shrimp, & banana pudding to my sisters. She had a grilled cheese bar & tomato soup, a couple different types of chicken (nuggets, wings & spicy fillets), various fruits, & chocolate layer cake. MONDAY: brown sugar & bourbon crusted ham, cheesy potatoes (from GFS), roasted brussel sprouts, hawaiian rolls TUESDAY: leftovers WEDNESDAY: ham soup THURSDAY: roast beef sandwiches, chips FRIDAY: fridge clean out

I made quinoa and roasted chickpeas to go with chicken soup for lunches this week.
Tonight - chicken soup w/wild rice Tues- Vegetarian canned chili over white rice Wed- Ah that's all I got so far.
Just me this week, no kids so keeping it simple

I want to try chicken cordon bleu again, made it recently and I don’t think I put enough ham/cheese in it. It was just good enough to make me want to make it better.
I have some leftover pork butt from my NYE meal so I guess I’ll make some pulled pork, unless I find something else to try with it.
Maybe orecchiette with italian sausage to appease DD’s pasta obsession.
Oh yeah I wanted to try ST French onion chicken too. That might have to wait though.

Tuesday: broccoli, ham and cheddar soup, homemade sourdough bread bowls, salad Wednesday: meatloaf, mashed potatoes, broccoli Thursday: cajun chicken, creamy garlic rice, asparagus Friday: pizza, salad, fruit Saturday: lasagna, salad
I’ve got to make another batch of sandwich bread for lunches this week. My recipe makes 2 loaves so we’ve been making one plain and one stuffed. I also want to make another batch of granola to have with yogurt.

H is out of town this week for a few days, but I’m still doing my best to cook food, because I have been extremely lazy about it for the last couple weeks.
Tonight- Thai curry noodles with beef (From Lillie Eats and Tells ONE More Time book), broccoli
Tomorrow- Coconut ginger instant pot chicken over white rice, more broccoli
Wed- Minestrone chicken soup, crescent rolls
Thursday and Friday- leftovers and maybe takeout

Tonight my H made kimchi-jigae and it was so delicious. Tomorrow pork loin, sauerkraut and pierogies Wednesday- red enchiladas Thursday- chicken breast TBD
I made a big pan of eggs and veggies for breakfast. I recently learned blending cottage cheese into the eggs makes them reheat so much better after freezing so I made a big batch.
Lunch is chicken salad and extra veggies.

I have no definite plan yet because apparently I just am over it.
Yesterday we did air fryer salmon, greens and rice
We have flank steak for beef and broccoli or fajitas, stuff for pasta fagoli soup, and chicken breast in the freezer to work with

Then hamburgers andspiral fries.
I have pork chops I'm thinking meatball subs and peas
Likely a pot of pintoes soup with ham bone followed by days of various Mexican foods. Burritos tacos toasdadoes. The ribs from beef roast made into soup.

Right before Christmas, I took my first cooking class and it was so fun and informative so one of my goals for this year is to take one per month. The instructor said she was just going to use a "little" salt and then proceeded to use more salt than I've used in a month on her one dish. I've noticed they do the same on cooking shows, Ramsay will say just a little and throw in a fist-full. So that's been my first change since the class, I bought a cute little bowl and flake salt to leave next to my stove and do the pinch-a-bunch method like they do instead of a shaker/grinder. I already feel more chef-y lol

Salt makes such a difference. My mom hardly uses any in her food and it's just...not great

Monday: out to eat Tuesday: I worked late so I just threw a sweet potato in the microwave and made a bagged salad. Wednesday: Sweet Thai Chili burgers with sweet potato wedges Thursday: Carmelized onion meatloaf sandwiches with roasted potatoes Friday: I’ll work late again. Maybe grilled cheese and soup? Saturday: Unfried Monterey Jack Chicken Sunday: Honey Garlic meatballs since that’s apparently all my children will eat that isn’t ramen.

Can officially recommend every recipe in this meal plan. My whole family loved them. They all made good leftovers too if you wanted to cook ahead for lunches or something. The tofu is the only thing I’m not sure how it would keep because there was none left. I’ll be trying another one of hers next week.
