Ladies, I'm in a cooking rut. And it's hot, so my favorite souls and chilis don't hit the spot (even if soup is on this week's meal plan). I love to cook, but need better weeknight (I.e., easy and quick) recipes. Thought others might be in a similar spot ... so what's for dinner?
Tonight we're having BBQ chicken in the crockpot (https://www.familyfreshmeals.com/2014/06/best-crockpot-bbq-chicken.html ) with corn on the cob and maybe a green vegetable.

Our meal plan for the week, in no particular order:
Eggplant parm, Fajitas, shrimp for me and steak for H Orange chicken in the IP Turkey breast in the IP and baked sweet potatoes And something else that I am pregnancy braining out on right now
We always do pizza take out on Sunday. Saturday is anything goes.

I'm doing bbq chicken tonight with corn and green beans.
H is away this week so my meal plan is currently chicken pozole soup for lunches and Fridays copycat bruschetta chicken for dinner. I'll wing it the rest of the week for dinners with leftovers and randoms like eggs.

Tonight we're having Italian beef sandwiches (made in the crock pot), creamy cucumber salad, and steamed green beans.
Other meals this week will include shredded beef tacos (from tonight's leftover beef), ravioli with meat sauce, teriyaki chicken stir fry, and grilled brats.

This week: Mom-Spaghetti and salad Tues- BBQing hamburgers and corn on the cob Wed-Grilled chicken w/asparagus Thursday-Tacos Friday-Salmon and rice w/a steamed veggie

I need some major inspiration too! I've been pretty lazy in the kitchen lately. This week though I think we'll have: Tonight: frozen pizza and salad (have a meeting with our financial advisor after work, so want something quick) Tu: Bean burritos W: Big Mac salad Th: laurensc927's suggestion of bruschetta chicken sounds good, with rice and veg of some sort F: We pretty much always go out on Fridays now

I'm solo this week, so I'm hoping DD and I can crash dinner at my mom's one night and my cousin's another. For the nights we don't I have planned:
Mexican torta sandwiches with chips and queso soft tacos with pinto beans and mixed veggies.
This weekend we will order pizza one night, do take out one night, and then grill on Sunday. Shrimp, Mexican street corn, and mashed potatoes.

I'm guessing you like your instapot? I've been debating it - love my crockpot, but DNW another device I don't use (I'm looking at you, panini maker and juicer)

The meat comes out a lot juicier than in the slow cooker. I am actually giving my slow cooker to my coworker who wanted to order one for Prime Day but I told her I would give her a free one lol.

I'm adding this to next week's plan! Next time I make it I plan to throw chopped up peppers into the IP as well. It's a short enough cook time that it should be perfect for cooking the veggies right in there too. It was really good!

I'm the worst meal planner in history of ever. Tonight we are having chili, hot dogs and cornbread.
Spaghetti is on the menu for this week, I may have to turn it into that IP spaghetti with meatballs.

Update - 2 y/o who at one time scarfed down the pasta decided that he doesn't like tomatoes ... or chicken ... or (after eating half of it) the kale. So basically, he had buttered noodles for dinner.
On the other hand, DH and I enjoyed it!

We have three things set up so far for this week: Filipino Caldareta Stew Filipino Chicken Adobo with rice and cooked cabbage We went to a market last week and had filipino food, so now we're recreating it at home Cod and green beans and potatoes I seem to only ever be able to think of three or four things at a time, then go back to the store mid-week with more ideas.
