wedding , are you having to eliminate red meat from your diet? It's kind of as tolerated. Right now I can eat a really good cut of filet mignon but nothing else sits well and I have to throw up. Chicken sometimes doesn't sit well. Most of my meat now is turkey or bacon.

No, he wasn't. He went vegetarian on his own for a more than a few years, but was terrible at it, eating mostly carbs. Two of his three siblings have been vegetarian forever, and they (and now their spouses) have been vegan for almost 8 years now. I've learned a lot from them. I'm not sure if I'm doing this for health or moral reasons, yet, but I'm definitely up for the culinary challenge. The goal is to make the plant the star of the meal. We are still going to eat eggs and yogurt, and try to keep our cheese consumption to a minimum. I don't buy anything with meat in it except the actual meat. So all veggie stock, no beans that have any pork flavoring or anything like that and so on. My biggest issue has been and still is, the mind switch. Growing up a meal is the protein, starch and vegetable. It's hard to make that change that a large vegetable portion can be the main component of a meal. And living with my parents, it's hard for them to get used to that too. Like I can make a HUGE batch of vegetable fried rice and some steamed veggies and thats a meal. But my dad asks me 10 times, so what else are you making? Lol.

I see. I think in the past when you said your in-laws were vegan I assumed that meant his parents were too. You can do it! So I naturally sat down and started thinking of how to replace the chicken or fish. I think that wasn't the easiest way to go about it. So then I figured out what we already ate that was vegan (mostly pasta dishes, fried rice and stir fries, and Mexican dishes), then I just figured why did meals have to look like they used to? So I started looking for recipes that seemed interesting and then never looked back. It surprised me how easy it was. I could easily live off of recipes solely from Minimalist Baker's website. Since he most times loves everything I make, he doesn't want to have to choose which to eat more of lol.

And then another thing is to take recipes you already like that could pretty easily be veganized (or made vegetarian) i.e. Chili, anything with ground meat could use tempeh crumbles, lentils, or Gardein crumbles.
I've even made walnut and mushroom "meat" which worked surprisingly well.
If you approach it like an adventure of cooking new things then it's less frustrating than trying to rework a lot of old menus, IMO.
ETA: I realize this is harder to do if everyone is not eating the same thing, but if you were to make sweet potato and black bean chili with cornbread, for instance, I don't think anyone would be wondering why there is no meat in it.

OH! I forgot about this! You'll be so proud of him, cagoldi. DH told me last week that any time I'm planning chicken for the protein, to just make him what I'm making me. I doubt he'll go meatless but it's something!

Saving this link, a couple of those bowls look good! I've made the stuffed peppers (so good and great reheated), carrot and soba noodle stir-fry, and the Mediterranean stuffed sweet potatoes. All of them several times. I like the sauce for the sweet potatoes so much I make extra and serve it as a dip for roasted artichokes to round out the meal. Sent from my iPhone using Tapatalk

That's what we did a couple years ago (that's actually when I went vegan). It's definitely a mindset change. I think in the past when we've gone vegetarian, we tend to lean on carbs and grains, but now the goal for me is to make sure that the vegetable is more prominently focused. I'm hoping to start on Monday, but I will need to do a pretty big grocery trip this weekend, so I might wait until Tuesday or Wednesday to start. Breakfast here really won't change for anyone – it's usually eggs, fruit, oatmeal or yogurt. Both kids eat what we eat for dinner, so will have no problems there, but lunch is usually an individual thing and we do rely on tuna or salmon, turkey or ham rollup's. It'll be easy for MH and I to change that, but I might keep the kids where they are for that meal.

Step in the right direction, I bought a blender for smoothies and jars for overnight oats.
We got our blue apron today and it has 2 meals with meat, so I'll start the veg challenge after those.

How is everyone doing?
I've been having my smoothies in the morning and overnight oats for lunch. I'm surprisingly not tired of them yet.
I've been trying to up my activity, but during the week it's harder. It's super hot and walks during the day result in a lot of sweat and grossness. A co-worker and I try to get out early in the day, but some days it doesn't happen.
Don't know if I've lost any weight. I'm scared to weight myself. I don't want the disappointment if there is no change.

I didn't lose any weight last week but I tried on some old dresses that fit nicely so I'm going to focus on that so I don't get too frustrated.

I got up for my morning walk at 5am and it was pouring. No go today but I will tomorrow. I am contemplating doing a couch to 5k but I'm scared of running.
