Taitai glad the cake turned out well! What did you think of it? Actually I take it back...it tasted better the next day and I would totally bring this to a party - it's something different. I too liked that it wasn't sweet and as I thought even though the frosting wasn't enough to cover the entire cake, it striked the right balance, anymore would make it too sweet. It was easy to make right? yes? danvers should totally make it for her pot luck next week. Springform pans...hhmmmm I think I have a Kaiser? Had it for over a decade and I only use it for Charlottes or anything needing side decorative. For cheesecakes I actually just use a normal pan - 3 inch deep though which ML makes. solves the problem of leakage with water in the bain marie. Hence I freeze it to make removal cleaner and easier. They make slip bottom pans now which would work well too except if making cheesecake you'd run the risk of leakage even with foiling the outer pan. Anyways very very highly recommend ML for bakeware. It will outlast you.

It will outlast you. Yes - leakage is always a problem we have with out spring form pans! I put some parchment paper in it sometimes to get a better seal, but it is hit or miss on whether it works 😩. Either way - will look into the ML pans! Sounds like they’re really good quality!

duskymonkey pancakes are a good idea! Give me all your pecan uses. And this has motivated me to get out of bed and make pancakes now.
