The thread over on General Discussions inspired me to get my rear in gear with planning. I've been having a good meal week and then a lazy one. Hopefully I can stay inspired because unplanned weeks tend to not be super healthy.
Monday: steak and veggie stirfry Tuesday: cauliflower-cashew alfredo pasta Wednesday: roast chicken and maple squash Thursday: chicken taco chili and cornbread Friday: leftovers
Weekend: holiday socializing and my nephew's christening so no real meals at home

My meal planning/cooking motivation really crashes this time of year. Which is not good bc when I don’t plan, we spend more money on lunches and there’s not much extra money lying around in December!
Sunday: potato & corn chowder with sausage
Monday: grilled pork tenderloin, roasted Brussels, butternut squash, & potatoes
Tuesday: grilled chicken tacos (pre-marinated chicken from TJ)
Wednesday: grilled cheese & tomato soup (From a can. Because lazy.)
That’s as far as I’ve made it. Hopefully there will be leftovers for Thursday and I’ll make a grocery run Thursday night.

We've had the stomach bug in my house, so I threw all my meal plans for this week out the window.
At some point this week, when everyone's healthy, I'll make tacos. I was also going to make some sort of chicken wing recipe. Wednesday DH and I have date night, so the kids'll probably get mac 'n cheese, pbjs, or cheese quesadillas.

dishingupthedirt.com/recipes/cauliflower-cashew-alfredo-pasta/I really liked this cauliflower-cashew fake alfredo sauce if anyone is looking for a healthier non-cheese or sneak in some veggies recipe. I was surprised at how rich/cheesy feeling it was for not having cheese. I sautéed mushrooms and spinach to mix in and added a dash of green hot sauce to my bowl. I did not use the almond crumble. It did make a ton so next time I'd halve the recipe. Dd loved it. In the toddleriest toddler move of all time, ds picked out all the parsley to eat and didn't touch the noodles. Dude. You're doing it wrong.

Monday: chicken and broccoli stir fry Tuesday: lasagna with ground turkey Wednesday: leftovers Thursday: chicken parm and roast veggies Friday: leftovers
It seems like a lot of red sauce to me but mh does all the prep for the lasagna and chicken parm so I don't care that much. I'll see how the lasagna goes. I'm feeling okay about turkey but the idea of ground beef still makes me queasy. Thanks pregnancy aversions!

Monday: Asian turkey meatballs, rice, sautéed zucchini Tuesday: pulled pork sandwiches, sweet potato fries Wednesday: baked ziti Thursday: Hello Fresh box Friday: sausage & carmelized onion pizza (H’s birthday dinner request)
I’m seriously lacking in motivation to meal plan, shop, or cook. So we will probably rely on the freezer for the next couple weeks. But that means I need to figure out what’s in there and remember to defrost meals in advance.

That's how I feel right now carrots. Which is why I asked mh to make a big meal with leftovers so I don't have think/plan/cook. We could probably get three days out of the lasagna if we don't use it for lunches. Your plan for this week looks delicious!
