I know that I need to do this as it is the only way that I can eat healthy during the busy work week

I try not to do more than a couple days at a time. I tend to get bored and not stick with things like I should if I do a whole week.
Rotisserie chicken is cheating and super easy. I will make a couple days worth of rice/potatoes/whatever strikes my fancy and a veggie of some kind.
Breakfast I will either cook some scrambled eggs and roasted potatoes or yogurt and some oatmeal and usually fruit with either option.

I was thinking of doing some egg cups for breakfast since those are easy to eat on the road

I was thinking of doing some egg cups for breakfast since those are easy to eat on the road I do this and it works out well! super easy to heat up and eat while I'm driving. There's a recipe on Kalyn's Kitchen that I use as a guideline and I typically put mushroom and green pepper in them.You can always switch up the veggies/meat/cheese to keep it interesting.

I make a breakfast casserole on Sunday sometimes that has eggs, sausage, and shredded sweet potato. It is so savory and then I just have a piece in the morning. Bonus, it is a super easy breakfast for the kids too. When I prep lunches, I will make 4 lunches. I make rice, 4 pieces f chicken and roast a sheet of veggies. I usually separate them so I am having a different side each day. Like GhoatMonket, I get bored easily. The best way I have found to prep is to make sure I make too much supper so I can take leftovers for lunch.

I always do my prep on Sundays (work M-F) and prep all my breakfasts, lunches and snacks for work. I use these compartment containers to put my food in for work. They stack nicely in the fridge and are dishwasher/microwave safe. For dinners I try to buy two-three kinds of meats for the week and get big packages and use one meat package for two dinners. Last week I bought a 6 pack of chicken and used half for buffalo chicken stuffed sweet potatoes and half for chicken tacos. I also pre chop all of my veggies for my dinners on Sunday if I can and store them in plastic baggies in the fridge labeled for what dinner they go with. I also always try to do at least one crockpot meal during the week and I just throw that meal into a plastic bag in the fridge so I can just dump it into the crock on the day I'll be fixing it. Weekends we usually do leftovers from dinners during the week.

I got in the habit of meal planning/prepping when I did a round of Whole30. I didn't stick with that way of eating after 30 days but I did find that meal prep makes life so much easier. I just planned out my meals for next week & wrote out my shopping list for tomorrow. For lunches I'm going to alternate between tuna w/ salad & turkey wraps. For dinners: Su: Skinny taste chicken parm M: Teriyaki salmon T: Leftover chicken parm W: Buffalo turkey meatballs (I made them last week & froze them) w/ salad Th: Balsamic chicken w/ roasted veggies (another skinny taste meal) F: probably out for Mexican
For breakfasts I like veggie scrambles so I will usually chop veggies for them on Sundays.
What is everyone planning or prepping for next week?

I do all my prep Sundays. Usually buy tons of veggies at Costco then chop carrots, tomatoes, cucumber, olives, bell peppers, cauliflower, etc. and put them in individual containers so I can throw together salads.
I do one baked breakfast item like banana bread or mini muffins and a huge batch of tofu scramble.
I roast sweet potatoes and cook quinoa or rice, make a couple of quick dressings.

So far I'm prepping only lunches and breakfast
This week I'm doing mini meat loaves with garlic roasted red potatoes and chicken fried rice for lunches with salad
Veggies, fruit, almonds, and hard boiled eggs for snacks
Egg muffins with spinach for breakfast
