i usually make chicken pho, but this is what i do-- cover whole chicken (or 4 chicken leg quarters) with water, poach with 2 quartered red onions, a few chunks of fresh ginger, 1 cinnamon stick, and 2 star anise until chicken is very tender and all fat is rendered out. season broth with salt, fish sauce, brown sugar, and lime juice to taste. add meat back in. soak rice noodles in boiling water until softened. add noodles and chicken to bowls and top with broth. serve with sliced white onions and table salad (bean sprouts, thai basil, mint, cilantro, and jalapeno slices). you can freeze the broth with the chicken in it for future use. to cheat, i'd reduce a carton or two of chicken broth with the spices and then top with rotisserie chicken and the table salad. i haven't actually made beef pho at home, but i'd definitely trust serious eats' recipe: www.seriouseats.com/recipes/2012/09/traditional-beef-pho-recipe.html
