I haven't actually meal planned other than simple breakfast and lunch stuff. Gotta go shopping for dinners tomorrow. I'm thinking dairy free Chicken tikka masala over cauliflower rice, steak with veg and potatoes, compliant hot dogs with coleslaw and that's all I have so far. tj, whadaya suggest?

I have two giant zucchinis, and some ground chicken. Can I make boats? I have cheese and tomatoes and herbs to stuff in them.
Why did I buy (and freeze) ground chicken?

Yep. Knock it out bro.
I mixed the ground meat, raw onion and garlic, zucchini innards I had scraped out, a can of tomatoes, and a sprinkle of almond flour and cooked it up with lots of season salt and pepper. Put my zucchinis in a casserole dish, and dumped the whole lot on top. Baked for 30 minutes covered, uncover, top with cheese, bake 10 more minutes.
Boom shaka laka.

Last night I ended up making a roasted chili lime pork loin (one of those pre-marinated ones) and the black beans with caramelized onions recipe I saved from a blue apron box a few months back. Soooo good and pretty quick. Tonight is the Mediterranean quinoa salad someone posted a while back. tj? maybe? That's as far as I've gotten this week. We'll probably do a big shop on Thursday and plan for the weekend.

Sorry, but I'm brain dumping right here for you, Stoney. Meatloaf with whole30 mash (sweet potato mash if you like it, cauli mash if you're hard core. Or white potato if you're like me -- I dice yellow potatoes, cover with homemade chicken broth, lots of garlic, salt, and pepper. Boil till soft, mash in pot with the chicken broth. Cook down until broth is absorbed and has mashed potato consistency. Sooo good with meatloaf) and a roasted veg. Spaghetti squash with meat sauce and green beans Buffalo chicken over spaghetti squash Baked sweet potatoes with toasted pecans and coconut Turkey burger patties with baked butternut squash "fries" Hawaiian burgers (beef or turkey patties with a slice of ham or bacon and a slice of pineapple) avocado slices on the side Any meat (chicken, pork chop, steak, whatever) on a kebab with veggies Beef stew omg so much beef stew Beef or pork roast with carrots and potatos Tom kha gai Thai chicken soup in coconut broth ETA: Omg! And stuffed or unstuffed cabbage rolls!

My plan starting today is:
Tonight: fish tacos Tomorrow: cauliflower cheese fritters with salad Thursday: skillet chili with cornbread baked on top Friday: beef paprika with noodles and salad Saturday: spaghetti pie Sunday: lentil soup with breakfast sausages on the side
My plan includes making Olive/bacon/cheese loaf and tri-level brownies tomorrow.

I haven't tried the fritters before so can't vouch for them: 2.5 cups finely chopped, cooked cauliflower. Strain and dry as much as possible, then mash. In a bowl beat two eggs. Add the cauliflower, 1.5 cups of grated mozzarella, 4 tbsp chickpea flour, three cloves of crushed garlic, salt and pepper. Should make 8 fritters. Fry in oil until golden and crisp. Serve with sour cream mixed with horseradish, lemon juice, and salt to taste.
