Get ready for various salad recipes that always show up at potlucks and church functions. Just know I personally don't eat the recipes I'm sharing because I find mayo disgusting.

Taken directly from an email sent to me by my mother.
Macaroni Salad 1 lb. small ring macaroni 1 green pepper (that is a bit much) 1 chopped onion (chop fine) 4 grated carrots 1 can Eagle Brand Sweetened Condensed Milk 1 cup vinegar - I use the clear 1 cup sugar 2 cups mayo 1 tsp salt 1/4 tsp pepper
Cook macaroni; drain & cool. Add chopped pepper, onion, carrots. Mix the "dressing" ingredients together and then mix with the macaroni/veg mixture.
I use mayo over miracle whip cuz the mayo is sweeter & smoooooother. the vegies are sort of at your own taste; I don't think we used green pepper last week. It will look quite soupy when you first put it together but it seems to "thicken" as it cools. ENJOY

Another email from my mother - This is Grandma Green's recipe: 2 cans peas - drained; keep 2 tbsps of juice 2 tbsps salad dressing - I use mayonnaise because it has more of a buttery flavor as opposed to miracle whip 1 tsp. sugar salt - a couple of shakes; don't need much!! 1 - 2 tsp pickle relish - only if you have it in the house 2 boiled eggs - mash with the fork to get it fine onion - really fine chopped; tablespoon at most cheese - small cubes of cheddar or shredded will work, too ( the cubes are more for appearance Mix everything but the peas & cheese together. Use the juice as needed to make it a "coating" consistency. Add peas & cheese and refrigerate. Grandma was a dump & stir type of cook. Measurements are sort of "firm" but she was very good cook.

ENJOY Minus the condensed milk and add a little Dijon mustard, and this is how my mom makes macaroni salad. And it's the best. Ever.

chickenonsunday! ::waves:: Not an Iowan, but will still offer up the toddler version of a Waldorf Salad. 2 Granny Smith apples, cored, diced 1 C raisins 3 T mayo ...That's it. Throw it in a bowl. Mix it up, add a little more mayo if the apples are large. Let chill. Enjoy!
