Does anyone know what can be done with windfall/slightly unripe apples? There is an apple tree on the property where we're living, and the ground is covered in apples that mostly look pretty good (maybe a spot here or there that we could cut out). I don't know the variety, but they are starting to turn red so I suspect the fully ripe ones will be red. The seeds are still green. I've tasted them and they are tart but actually fairly good. J has been throwing them into the woods "for the animals!" but it seems like a waste! Google says unripe apples aren't dangerous to eat, but might be hard to digest. Think they would be ok for applesauce? Any other ideas?

If they are tart maybe a pie or other dessert where sugar is added?

I think cooking of any sort will help a lot. Plus sugar.

When my grandmother's apple tree had tons fall off early, we made so much applesauce. Cooking helps a ton when they're not quite ripe.
