I'm not cooking a ton lately, my appetite is just gone. This is what I've for for the week.
*Caprese chicken burgers, fresh fruit *Chili-sounds good even though it's still summer. *Chicken+chorizo paella *Cheeseburgers w/fresh tomatoes and sweet corn *Spaghetti, Caesar salad, breadsticks *Chicken fajitas

I'm struggling with meat these days - especially red meat. We have a ton of ground venison in the freezer that we need to use but I have no desire to eat it.
Here is what I have so far:
Monday: Chicken soft tacos Tuesday: Beef stroganoff Wednesday: Chicken quesadillas Thursday: Leftovers from the week Friday: Pizza (or other takeout)

Tonight: stuffed chicken and broccoli cheddar quinoa with green beans T: homemade BBQ burgers with watermelon, salad and chips W: Hawaiian meatballs and rice with green beans T: leftovers F: sloppy joe baked potatoes with salad

I'm not feeling chicken these days and the thought of leftovers repulses me. This sucks because we eat mostly chicken and we usually plan to cook every other day and have meals last 2 nights. Last night I had cheerios and cherries while H had leftover chicken and potatoes. I think we're supposed to have leftovers again tonight (I grilled a 5 Lb chicken on Sunday). Maybe I'll make pasta for myself? mommabakes, you're a rock star.

Monday: Egg Salad sandwiches, chips, grapes, cucumbers Tues: every man (and woman) for him/herself Weds: Grilled chicken wraps, roasted beets Thurs: Pizza pepper boats Friday: Cabbage soup with hopefully enough to freeze some

M: jerk chicken, rice, corn on the cob Tues: spaghetti with ground beef, onions, mushrooms and broccoli W/Thurs: crockpot chicken sausage/quinoa/peppers F: unsure but probably crockpot pork and sauerkraut with green beans and hot applesauce

M: Leftovers T: Nacho Casserole W: Lentil Soup and fried zucchini Th: Costco hotdogs F: Sandwiches, carrot sticks, and cantaloupe at the park Sa: Crockpot meatballs on subs Sun: Hamburger soup Tell me more about this nacho casserole. brown 1 lb hamburger with an onion, layer with a can of rinsed and drained kidney beans, 2 diced tomatoes, and a heated mixture of sour cream, diced green chiles, and tomatoes and green chiles with cream of chicken soup- i make my own to reduce sodium. Add grated cheese on top and stick in the oven at 350 until cheese melts. Serve over tortilla chips.
