Goddamn, charlotte. I've made it this long without downloading mealime, but you just tipped me over the edge. Downloaded.

I'm relying on tried and true basics and easy lately.
Chicken(either oven or grill) with sweet potatoes and fresh corn on the cob
Lasagna (from costco, frozen)
Chicken lime tacos with pineapple salsa (my most adventurous recipe of the week - but most can be done ahead of time)
Chicken teriyaki with rice
Possible that one menu could get dropped for eating out or leftovers

I have no plans for the week. We've been taking care of my fil this weekend and it's been exhausting. He's going home today so hoping to regroup this afternoon.

I know it's the end of summer and I should be appreciating the dregs of beautiful weather, but I'm just longing for a cold rainy day so I can make pot roast and mashed potatoes.

We made the Asian noodle salad last week. It was good but the spaghetti absorbed alot of the peanut sauce so it was a bit dry. I would probably thin the sauce out more next time.

I pretty much double every sauce in any recipe ever. I am 99% there for the sauce.

I'm not very good at following recipes so if it calls for 12 ounces of broccoli slaw I'm most likely going to use the whole 16 ounce bag. Also terrible at portioning pasta. That's probably my problem lol

It's just the stem part shredded. I buy it at Trader Joe's and the cut is more like a mandolin setting than a box shredder if that makes sense.

My current meal plan for the week is to eat the massive amounts of food my MIL sent home with us from their Anniversary party. Three big bags full of two kinds of lasagna, a big container of tapenades, bread, arancini, meatballs, and I don't even know what else. We're having our neighbor friends over for lasagna tonight.

I have no meal plan this week. But we were running behind with no plan today, so I had to throw something together...
I had leftover roast in the freezer. So I threw it in the microwave, drained off the extra liquid, and reduced that, added cornstarch and salt and pepper and made a gravy. Then I made some polenta out of an old bag of corn meal in the pantry. Added some cheese and garlic salt. Steamed some frozen veggies.
Voila... pork roast and gravy over cheesy garlic polenta with steamed veg. Deee-licious, and took 20 minutes total.

tj you're amazing! That's something MH would pull off. I'm far from creative enough to come up with a yummy dinner from "nothing" like that.

I downloaded the mealime app and it looks amazing! I'm looking forward to using it sometime. Since I just had a baby, the current plan is to eat whatever people bring us and use Munchery (we were gifted a pretty generous amount) to fill in the gaps. I did get the ingredients to make a chili too, so I'll break out the instant pot soon.

I've been eating a ton of naan, hummus and chicken shawarma. It's like all I want to eat. It satisfies my mouth and soul. I need to get back to meal planning though, because my family is over it.

@criscosalad the chicken fajitas are so good. They are requested almost every week by my husband. Definitely a favorite here.

milano that chicken is amazing. I like it with naan and tahini, but I love it just tossed on top of a salad too. Yum. Now I am going to have to make some this week.
