Lighter Banana Bread INGREDIENTS 1 cup mashed ripe banana (2 to 3 medium) 2/3 cup sugar 1/4 cup vegetable oil 1 large egg white 1 large egg 1 3/4 cups all-purpose flour 1 1/4 teaspoons cream of tartar 3/4 teaspoon baking soda 1/2 teaspoon salt 1/2 cup chopped walnuts (optional) DIRECTIONS 1. Heat oven to 350°F. Grease bottom only of 9x5-inch loaf pan. 2. Combine first five ingredients in a large bowl; blend well on medium speed of mixer. 3. Combine dry ingredients, except nuts, in a separate bowl. Add to wet mixture, stirring slowly until just moist. Pour batter into prepared pan. 4. Bake 40 to 45 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely on wire rack. 1 loaf (18 servings) NOTES I make this recipe with chocolate chips AND walnuts for gifts.

I do this, but add a few random scoops of either Greek yogurt or sour cream to make it extra moist.

Banana muffins are made! Thank you guys so much for your input. 😊I used the first recipe posted because it was the only one I had every ingredient for without going to the store. Maybe I will venture out and try another one. I still have bananas left.

Okay so this isn't banana bread but it is a tasty alternative. Normally to me brownies without chocolate are not brownies, but these banana brownies (or cake really) are amazing. It might be the browned butter I really love but trust me, the stranger on the Internet, they are so good. www.food.com/amp/recipe/banana-bread-brownies-507176

3 bananas 2 eggs 1 c sugar 1 3/4 c flour 5 tbsp butter/margarine 1 tsp baking soda chocolate chips 1/2 tsp vanilla - Preheat oven to 375 - Cream butter and sugar. Add eggs and vanilla. Add flour and baking soda. Add bananas. Add chocolate chips. bake for 45 min - one hour or until done.
I sometimes use a combo of white and brown sugar, but as long as you don't exceed one cup, you are good to go. enjoy!

1 stick of butter 1 c of sugar 3 ripe bananas, mashed 2 eggs 1 1/8 c of flour 1 tsp baking soda Sprinkle of salt if you're using unsalted butter
Cream butter and sugar really well, add mashed bananas and eggs and combine. Stir in flour and baking soda. If I'm adding chocolate chips, I add them at this stage so that they are coated with the flour and don't just sink to the bottom. Bake at 350* for 50-60 minutes.
