Yes! I have 2 days this week where dinner involves meat, but other than that, no meat for me.

I'm pretty excited about it. I like trying out new recipes. I have a feeling Cadence might like it too, she's not a big meat fan, other than her chicken nuggets.

I found a brand that are exactly the same if you wanted to try them. A can't even tell a difference. I keep them on hand for quick dinner/lunches.

Dude loves the BOCA nuggets. He was never a fan of meat except nuggets and fish sticks.
I switched him to the BOCA and he never knew the difference.

I'm on week 3 of no sugar (other than a cheat meal a week)! I really need to work on bringing more vegetables into my diet. I eat a small serving with most meals, but I could definitely do more.

wineallthetime, do you smoothie? That's an easy way to get more servings in. I even got some hidden spinach into Cadence the past 2 days. Not much, but more than she would take in if I presented it to her on a plate.

wineallthetime Veggies were really hard to get used to when I started JC, literally half my plate is veggies. My go to sides are: Pea pods steamed with a little margarine and salt Steamed carrots with a little margarine and dill Steamed cabbage in veggie broth and seasoning sal Cesar salad Raw veggies and lite dip Steamed broccoli or cauliflower with a bit of sprinkled cheese

You can do lots of veggies in soup.
I like @klongoria's smoothie suggestion, I usually get a huge serving of greens like that.
Play around with different hummus recipes like carrot and beet.
I know how weird they sound but veggie fajitas are so delicious and easy. Sautéed zucchini, red onion, and corn topped with guacamole.
I like collard greens as a sub for tortillas.
Mediterranean Veggie sandwiches or wraps with onion, tomato, cucumber, spinach, and hummus for the spread.
Add bell peppers, onions, and kale or spinach to scrambled eggs if you eat them.
We do baked potato loaded with broccoli, carrots, zucchini and summer squash and a "cheese sauce" (which is also made from veggies).
Our main dish is usually legumes with veggies of some sort so most of my recipes would be subs for meat instead of sides but I have lots if you want them.

For those of you who eat eggs, it's really easy to add lots of different veggies into frittatas, omelettes, or any kind of egg bake really

This world needs more fast food options for non-meat eaters. Traveling and finding places to eat is freaking hard. Especially down here where there is a Whataburger on every corner and people literally eat their daily. It really isn't easy. Is there a Subway near your hotel? Some Wendy's locations offer a black bean burger.

klong11, this is the brand I couldn't remember. I love all their stuff. these are great and the nuggets. I can bake them the night before and reheat for lunch at work and they taste fresh.

@klongoria, I don't know whataburger, but five guys will do a veggie sandwich with all of their fresh and grilled veggies together. It's delicious.

Mr. Gatti's also makes a really good spinach alfredo pizza. What I should have done is just gone to the store to buy our food, but Cadence likes to eat out and the room's mini fridge didn't have a freezer.

It's kind of unreal the lengths you have to go to to find or modify even a salad to leave off the animals. I love the veggie delight! That was always my favorite thing before I was vegan, now I just get it on different bread and of course, no cheese.
