Sunday: creme brûlée French toast, tofu scramble, strawberries Monday: black bean and sweet potato chili, Spanish rice Tuesday: leftovers Wednesday: roasted red pepper pasta, panzanella Thursday: "cheeseburger pasta toss" Friday: quinoa salad, roasted corn Saturday: cream of tomato soup, grilled cheese
I'm cutting wheat this week so I'm going to have to make some substitutions for my own dishes.
I also found a green smoothie recipe Pete and I both like so I'll make those for breakfast or morning snack most days.

Still can't get into zoodles but I guess I need to force myself to like them.

Is there a good way to cook the zoodles? Are you sauteing in a pan or putting in boiling water like noodles?

M- sesame soba noodles Tu-chick pea and potato masala W- lentil sloppy joes with spaghetti squash Th-spicy kimichi quinoa bowl F- veggie loaded breakfast casserole Sa- veggie burgers I'm pretty sure the order of these things will change, but these are the sux veggie recipes I planned out for the week

Like lasagna, but I'll use the squash as noodles. One of my favorite restaurants has a "raw" lasagna with cashew ricotta and zucchini in place of noodles. Sounds weird but it's amazing. Sent from my iPhone using Tapatalk I didn't buy the cottage cheese yet, and I have raw cashews in the house. I'm guessing you just make the cashew cheese with nutritional yeast, lemon juice, spices, and some vegetable broth if it needs thinning? ETA: i use the oh she glows cashew cheeze recipie

I loooove zucchini and eggplant fritters, slice them, salt them leave for an hour (longer if you have time), pat dry and coat them in a beer batter. Easy and yummy!
I also love to grill them and make luke warm salad with balsamic vinegar and goats cheese.

W: Potato salad, ratatouille, something grilled, I bought portabello caps for mom and I
Tr: Leftovers/on your own
F: Chili and corn bread
Sat: Breakfast for dinner, biscuits and egg gravy and hash browns
Sun: TBD - something easy.
