I am such a rut, I need ideas.
This week we are having:
coconut curry chickpeas w/pumpkin (NYT)
lemony white bean soup w/turkey and greens (NYT)
pork chops, roasted green beans
Then I have no idea.

Let's see trying to clean out fridge and pantry a lot.
Yesterday made beef vegetable soup from rib bones from NY day "prime" rib roast. So that's Monday too maybe enough to freeze. Hamburgers curly fries and carrots Leftover from tday turkey into tacos and green enchiladas It's supposed to be rainy more this week so probably Split pea soup with ham bone from Xmas I need to make a stuffed acorn squash before it goes bad but haven't decided what to stuff it with I also have a pie pumpkin and frozen pumpkin was going to make pumpkin soup but last time son made pumpkin soup it went too sweet and then tried to bring it back savory and that was blah
So probably tomato soup and grilled cheese sandwich
We have baby salad greens in the garden but they are big so salads Maybe add some chicken tenders to them or boiled egg and ham to make salad whole meal.

I made the kalua pork from skinnytaste yesterday, so we're having pulled pork sandwiches, tomato beans, and salad tonight. Tuesday: chicken pot pie noodles also from Skinnytaste, I have some bone in chicken breasts I baked this weekend to use up. Wednesday: penne and red sauce, garlic bread, salad Thursday: Baked Gallic and Lemon Cod, coconut rice from ST, brussel sprouts Friday: Turkey Confetti chili, cornbread

I have ground beef too just don’t know what to make with it I do too so it's on the maybe list for stuffing acorn squash Or for meatloaf or hamburger tacos. Of course dh just wants to make green chili

Rest of the week: Chicken meatballs w garlic cream sauce and mashed potatoes Baked pasta & garlic bread Cashew crusted chicken & steamed veggie Homemade pizza/calzone Heat and eat chicken pad Thai from Costco.

I'm out of the house and the boys are on their own for three nights this week. So they are having: take out, leftovers, and hot dogs. Not much of a meal plan.
We had chicken tortellini soup and lasagna over the weekend- excellent snowy day meals.

We are down to a bare bones kitchen while we renovate but here’s my tentative plan.
Monday: sheet pan chicken fajitas with lots of fixings Tuesday: French toast casserole, sausages, fruit Wednesday: avocado blt salads Thursday: baked pasta, broccoli Friday: pizzas, cut up fruit and veggies

I am also in a rut and under a heavy cloud of anxiety atm so I will be phoning it in this week.
- Mediterranean bowls (purple sweet potato, chickpeas, cucumber, tomatoes, onion, etc) - Pasta and garlic bread - Chicken salad wraps - breakfast for dinner (homemade egg bites and avocado toast)

We did chicken noodle soup and dutch oven no knead bread last night. I hadn't made bread in ages.
We have a package of teriyaki pineapple chicken meatballs from Costco that we're having tonight. I'll make broccoli and rice to go with them. Tuesday- chicken tacos, black beans, leftover white rice from tonight Wednesday- bbq beef, slaw. Perhaps a carb if there's something in the pantry. Thurs- DD3's school is having spirit night at a pizza place. Fri- something I don't cook since I have an evening appointment. Hoping there's enough leftovers to make it a fend for yourself night.

Crock Pot Beef and Broccoli with Rice Ground Turkey Flautas/Salad Ravioli with Super Veggie Red Sauce and Spinach/Salad Lentil Soup with leftover Christmas ham bone - I wish I had made/bought good bread to go with it And then fill in with leftovers

I'm out of the house and the boys are on their own for three nights this week. So they are having: take out, leftovers, and hot dogs. Not much of a meal plan. We had chicken tortellini soup and lasagna over the weekend- excellent snowy day meals. I used to travel a lot for work (usually for a night or two but it added up), to the point I was worried it was negatively impacting the kids. I brought it up one day and my oldest responded immediately he loved when I went away because Dad always got him happy meals for dinner.

I, too, am in a rut. I'm feeling overwhelmed by life as a whole (trying to catch up on housework/organizing after Christmas & being sick and then cold/snow days last week and starting a home renovation that weather made us pause, etc), so I'm keeping it semi easy this week. We did date night in on Saturday, ended up with nachos yesterday & today is Girl Scouts at 5:30 & H is at work until 8, and another possible snow day tomorrow, I'm waving the white flag.
SATURDAY: charcuterie for 2, butternut squash lasagna, dressed greens, dessert SUNDAY: had turkey noodle soup planned, ended up with nachos from a local place while we watched the Detroit/Tampa game. MONDAY: chicken nuggets, fries; leftover lasagna TUESDAY: california sushi rice bowls WEDNESDAY: honey garlic glazed roasted pork loin, roasted sweet potatoes & brussel sprouts/broccoli THURSDAY: spicy miso brown butter pasta FRIDAY: roasted veggie & whipped goat cheese naan pizza (cheese & pepperoni for kids)

I used to always work at least one late night; now it's more rare. This week a whole bunch of weird things just lined up. DS is excited that the "boys' night" tradition has returned. And, usually my H does the majority of the cooking anyway. It's nice to take advantage for them and have something exciting, though.

Yesterday was sweet potato chili and cornbread. Tonight will be ginger and garlic green beans and tofu. Tuesday - mushroom tacos Wednesday - soup from a puree of sunchokes and potato Thursday - black rice, sweet potato, spinach, avocado bowl Friday - takeout/delivery (probably Thai)

I just want comfort foods so I’m leaning into childhood memory dinners this week.
So far:
For lunches: My riff on groundnut stew with black eyed peas added because I had them
-Stuffed peppers -Thai takeout -Pasta with broccoli, browned butter, and garlic -Ground beef and gravy over mashed potatoes, fried cabbage -TBD dinner with some type of slaw or cabbage because I bought a big head.

I'm also in a rut. Alot of our dinners lately have been prepared foods from Costco or frozen.
BBQ pork sandwiches, mac and cheese, BBQ pork nachos Chicken marsala, pasta, salad Pot Roast (From Costco), mashed potatoes, roasted carrots Turkey Burgers, fries

I'm on a new crusade to swap out my traditional grocery store meats for local farm humanely raised so that's been a process. Because it will be cheaper once I can get a deep freezer and buy it in bulk, but I'm currently waiting on the electrician to wire for a freezer. So in the meantime, I'm having to spend a fortune on a la carte/ individual portions. But it's been extra delicious at least.
sirloin topped with garlic butter and mushrooms with side of broccoli pan seared pork chop with leftover broccoli garlic crusted pork tenderloin roast with baby potatoes bison burgers with frozen fries Asian-style bag salad and first attempt at an almond crusted tofu
