I make a salad with fresh corn cut off the cob, tomatoes, green onion, avocado, and dressed with olive oil, lime juice, salt and pepper. Sometimes some cumin. It's amazing.

Is this the place for potato salad? I was lurking Parenting and had M make one of the recipes this week. So unhealthy but soooo good. I was never a fan of potato salad growing up but it never had bacon in it.

I just grilled halved carrots the other day, low and long, then tossed them in vinaigrette. They were great.

I just grilled halved carrots the other day, low and long, then tossed them in vinaigrette. They were great. Same! Well, I put Italian seasoning and EVOO on first and then grilled (with zucchini, too). So good!

I definitely need to try the grilled carrots, I have a bunch in my garden that need to be pulled.
Zucchini noodles are a favorite, I am loving a recipe from Mealime that has meatballs and tomato sauce over zoodles. I also love a simple tomato salad with chunked up tomatoes, lemon juice, olive oil and salt and pepper. you can throw in some cucumber if you're feeling fancy or don't have a lot of tomatoes.
My other current favorite is open-faced provolone toast topped with sliced tomato. Basically, get some slices of crusty bread, lightly toast it, put some slices of provolone on top and put it under the broiler. You could put a little mayo underneath if you want. Once it's nice and golden brown, top it with slices of tomato and salt and pepper. It's divine and I could eat them all day. Can you tell I'm excited for the tomatoes coming out of my garden?
