I miss our weekly meal plan threads. I need ideas. I don’t have a meal plan but there are the most recent hits at our house…
Breakfast tacos Impossible cheeseburger pie (throwback to childhood) Stuffed pork chops Stuffed peppers (no pepper for E, just the filling)
I recently made TJs chicken and rice, which I hadn’t made in forever.
I wish E would eat more vegetables. He says he likes carrots and we picked out a recipe for them together (lime carrots, pretty good) and he ate like one. He used to like summer squash and zucchini and now he says he doesn’t. I did get him to eat a salad comprised of all his approved vegetables so that was a win but I’m annoyed.

Seriously though, why won’t my husband shop for and cook a goddamn dinner? Every time I put it on him we get takeout. He knows how to cook.

I’ve gotten into a slump.
Spaghetti and meatballs Pancakes and eggs Tacos
I need to sit down and work on some meals this week, but I also need to figure out what we are doing.
Monday - martial arts classes Tuesday - nothing, so need a meal Wednesday- martial arts classes Thursday - Girl Scouts, husband needs to cook Friday - competition team
My weeks are so crazy

sarenu what are you feeding your kids for veggies? I need kid friendly ideas. I can’t keep giving this kid cucumbers and tomatoes for a side.

Okay so I need to back stock my freezer.
Jambalaya Spaghetti sauce Ham and bean soup Granola
I’m in the process of making a big batch of waffles for the kids. I need to get my eating back on track.
We moved 20 minutes from our old house. I’m feeling so lost in the new area. I have found Aldi, Jewel, Trader Joe’s, and Costco. Thankfully everything is still the same distance (all within a 20 minute drive).

This is what I sent to J this week. No particular order, other than pizza Friday. M is with grandparents this week, so can do any meal whenever. Normally we have play rehearsal on Tuesdays, which is next to a Mexican restaurant, so it often ends up being that.
Egg roll in a bowl Taco bowl on cauliflower rice Big salad night (grilled chicken, boiled eggs, lots of veggies, whips cheese crisps, bacon, etc) White chicken chili Pizza Friday Roast chicken with sweet potatoes and Brussels sprouts

MH has been making me egg drop soup a lot lately. And sometimes we add rice noodles to make it more filling.
Tonight is leftover burgers and fries. Tomorrow is BLT pasta salad. Pad Thai takeout sounds good.

Tonight I’ve got some tuna steaks I’m gonna bake. My kids are coming around on a lot of fish and we have a lot of tuna my BIL caught in the freezer. So I need to prepare it in a very basic way that they’ll like. They like it in sushi, or seared with sesame, but it’s been frozen a couple months so I’m gonna cook it fully this time. But overall I have successfully taken my kids from fish sticks to eating baked fish (salmon or white fish) once a week. It’s been a long process and I’m proud to have come so far.

We're in full-swing Spring sports busy season, so we're doing a lot of improving meals.
Monday is ⚽ - I heated up some pre-made beef bulgogi from Costco and made rice and steamed stir-fry veggies on the side. And kimchi for me and S.
Tuesday is 🏊♀️ - Steve made some "French dip inspired" sandwiches with leftover smoked brisket braised in some different up beef broth. Served on Kings Hawaiian slider rolls. And he made sauteed kale on the side. The girls enjoyed dipping their greens in the broth.
Wednesday is ⚽ (though it snowed today, so the fields may or may not be open tomorrow)... Veggie soup most likely 🍲
Thursday is 🏊♀️ - maybe baked salmon and roasted veggies
Friday (free day!) - I'm thinking baked potato bar 🥔🥦🫘🥓🧀
