Yesterday was what I call everything pasta. It has artichoke hearts, mushrooms, sundried tomatoes, and smoked sausage with a cheese sauce.
Tonight is honey sauteed chicken in a Spanish rice mix.
Tuesday is spicy shrimp burrito bowls.
Wednesday is chicken alfredo in the crick pot.
Thursday grilled pork chops, grilled corn, and sauteed asparagus with mushrooms.
Friday is yum chicken with rice and green beans.

i need an instant pot. damn vacations on prime day. It legit is the best thing I've purchased for the kitchen. I made pork chops in it in 10 minutes, took them out, steamed broccoli in 2 minutes. One pot for dinner in less than 15 minutes. And my kids have been eating all of their dinner. So it's a win all around. Check Kohl's periodically. I heard they run sales on them, plus the 20-30% off coupons they offer often, you can get it for a pretty good price!

How do you steam veggies in there? Are there instructions somewhere I can find? I can look online, just wondering if i need accessories?

We are doing the KISS method this week because I want as empty of a fridge as possible before Saturday.
Last night the kids had french toast, H made a sandwich and I had leftover pizza Tonight we will do sausages/burger/hot dogs on the grill. I need to see if I have fries or something I can throw in the oven Wednesday we are going to have dinner over at a neighbors Thursday will probably be leftovers or something quick to eat Friday the kids and I (possibly H as well) will be at my parents in the evening Saturday is party day

easternshoregirl, I steamed frozen broccoli. I just googled quick. The broccoli would have fallen through the openings of the trivet that comes with the IP, so I put the trivet in, and I had a s teamer basket insert for a medium pot that I put on top of the trivet. I used the liquid that was already in it from the buttery pork chops and added a little more water since I spooned some out over the chops. Pressed steam, set the timer for 1 minute and then QPR it. And viola!

I freeze it then the day I want to make them I let it thaw. Then it is pliable and you never have to actually steam it. It saves a bunch of time! The rest I mix together, roll the cabbage rolls, pour the sauce over and just throw it in the slowcooker for the day. It simplifies it quite a bit.

Do you use the Hip2Save blog? There are a ton of good deals....and she's usually good about telling about Instant Pot specials. I will let you know if I see another one. The $20 expires on 7/30, right?

This is the ratatouille recipe I used... www.food.com/recipe/pressure-cooker-ratatouille-431431After dinner, DH declared he is the true winner with me getting the Instant Pot, with all this good food! So we liked it. The ingredients list includes balsamic vinegar and I just added it after cooking. We tend to like vinegar-y things so this was no exception. I served it over pasta but I would prefer it with rice and definitely with bread to soak up the juices! I also didn't have the right herbs/spices so I added some dried basil and marjoram while sauteeing and no fresh ones at the end. I thought I had parsley but we must have used it all.
