Does anyone have a recipe they love for potato salad that does not have mayo in it?

Does anyone have a recipe they love for potato salad that does not have mayo in it? I made a hello fresh meal once that had a salad of potatoes and green beans, but I think you could totally leave the green beans out to make it a potato salad. It was potatoes, green beans, onion, celery and fresh parsley. The dressing was mainly sour cream seasoned with a little dijon mustard, a small amount of red wine vinegar, enough olive oil to thin it just a bit and salt and pepper. I love mayo based potato salad, but this was surprisingly tasty. Sorry I don't have the exact recipe, but hopefully it gives you a jumping off point.

My favorite way to make potato salad is to boil red potatoes with salt and then sauté bell peppers, onions and other veggies of choice (cabbage and garlic are other yummy additions) in olive oil and then I toss together the potatoes, veggies, more olive oil and salt and pepper to taste. You can also mix in mustard. Serve hot or cold.

I was out of mayo. It was a rush thing so I ended up using a Jamie Oliver recipe. Basically Dijon, white wine vinegar, olive oil and herbs.
