Sun: leftovers Mon: sausage and sauerkraut, broccoli Tue: frozen chicken tikka Masala over rice, green beans (soccer) Wed: baked striper, cabbage, sliced tomatoes Thur: pasta, meat sauce, veg Fri: leftovers thrown into fried rice
We haven’t been to the grocery store in like weeks. This is all freezer and pantry foods.

Sunday: pizza Monday: pancakes and eggs Tuesday: brats, green beans, and oven fries Wednesday: something in the crockpot Thursday: chicken breast and roasted veggies with rice Friday: takeout or sloppy joes Saturday: the shepherds pie I never made last week

I need to run to the store for milk and fruit. We are almost down to 2 apples and a handful of lemons.
I think I might have some canned peaches I can break out, but F is not a fan of canned fruit.

Tonight we had salmon, asparagus, and smashed potatoes.
Tomorrow is fish tacos for taco tuesday.
Wednesday is lasagna from the freezer.
Thursday TBD.
Friday we have a food truck coming.
Saturday probably eating out or takeout, unless MH feels inspired to cook.

Every time I spatchcock a chicken, it takes for.ev.er. to cook. Like, way longer than all the recipes say it should. And I use a cast iron and brown it first before putting it in the oven. So what am I doing wrong?!

Is it the same with all other baking?
I would say using cast iron and not pre-heating it in any way will cause the issue, but if you are searing then baking, it will be warm for the oven.
My only thought is the oven isn’t holding temperature well. Or the chicken is getting over cooked.
You can also use something like a Meater to watch temp and cooking time in the oven as it goes. We have one and love it for big roasts or chicken because it keeps an expected cook time. Then I can start my sides based on time left.

And the MEATER tells you internal, target (based on your meat and how done you want it), and ambient temp.
You don’t need to get this one, but i highly recommend one you can keep in the bird and watch. Then you don’t need to open the oven.
If you are taking it in and out several times, it can be part of the problem.
