Since I’ve been here, we have had:
Salmon and stir fried veggies Lasagna Lemon asparagus pasta
Tonight is BLTs with potato chips
Tomorrow may just be pizza. I’m running out of quick easy ideas. We keep thinking we’re transferring my dad so we don’t want to buy a bunch of groceries. But by the end of icu hours we are exhausted and there aren’t a lot of takeout options here.

This seems appropriate here.
I made a meal plan and grocery shopped before I left town. Mh actually stuck to the meal plan, cooked and fed the kids exactly what I had bought and planned for the week. It’s like a miracle.

I don't have a plan, but I want to share one of our new favorites, though the kids are sick of it now and we have to take a week off.
Sheet pan sausage - 1 large sausage sliced, 1 onion sliced, some fingerling potatoes, a bag of mini peppers (slice up the last two things if you feel like, I'm lazy, but MH will actually chop more stuff) Toss it all with some olive oil, and throw it all on one sheet pan in the oven at 350 for about 25 minutes Scoop out a bowlful and put some cheese on top if you feel like it
Bonus meal - add scrambled eggs to the leftovers the next morning.

I made some pork chops with fried cabbage the other day that was really tasty, so I think I might do that again. With mashed potatoes? I might make some stew, since I have some turnip (rutabaga) to be used up. If I do that I'll probably try my experiment of making bread in the air fryer to go with it. I also found a recipe for scalloped potato soup that I kind of want to try. It's going to be a cold week, so looking for hearty meals. And cheap, since we're on no/low spend January

Also making chili - its cold! Hot dogs and canned corn for an after school busy activity night Spaghetti and (frozen) meatballs and salad for the second one. I want to make either squash soup or tuscan chicken soup for lunch/random dinners Maybe sweet potato black bean tacos, but P won't eat either of those things so kinda kills it. I have sweet potatoes so may copy sarenu, for breakfasts...what do you do make wedges? What else? Other soups?

Tonight is my parents' last night here. We're making ham, scalloped potatoes, coleslaw, and peas. We'll have leftovers tomorrow night.
Monday I'm making a sausage and potato dish. Fry onions and sliced Italian sausage until cooked. Add herbes de Provence and potatoes that have been boiled partway through and fry until they're soft. Then smother the whole thing in grated gruyere and cover with lid until cheese is melted. I'll make a salad to go with it and sliced cucumbers for the kids.

I made ham and scalloped potatoes last week and have been craving more ever since so I'm makingore next week. It might be my favorite food.
Tonight a burger food truck is coming to our neighborhood so that takes care of dinner.
I'm due for a pot of Ramen.
And with that I'm out of ideas.

Pork chops and sauerkraut w/ roasted broccoli and mushrooms
Smoked whole chickens with roasted root veggies. The chickens took longer than expected so everyone filled up on veggies.
We just started a stock pot of broth, so that will go for a couple days. Tomorrow will be leftover chicken on salads
Wednesday will be chicken phô
We also have orange roughy to use at some point this week.
