They are not candies. They are no bake cookies. And they are so famous and well known in this part of the country that I never guessed I would need to provide a recipe! I just assumed everyone made these all the time. If you google chocolate oatmeal no bake cookies, there are a billion hits and they will narrow down to 2 types. Peanut butter or no peanut butter. It’s a personal preference, though some say the pb ones set up more reliably. My mom always made them with pb so that is my preference. +1 My mom always made Chocolate PB no bake cookies. So good! I may need to make some now. We have a peanut allergy as well.

Well today is our swap. I made chocolate peppermint crinkles earlier this week.
This afternoon will make rosemary butter cookies and some goody bars filled with sugar.
Its been a week.

+1 My mom always made Chocolate PB no bake cookies. So good! I may need to make some now. We have a peanut allergy as well. They are still super delicious without the pb. I am shocked that you and ovenrack have never had them. Please try them guys. Please.

We are baking gingerbread houses today. I think it'll make enough for the girls to have their own, plus one for me to decorate for my perfectionist self

I have made 3 batches of candy cane dark chocolate fudge and 2 batches of salted caramel pecan brittle so far. I need at least 2 more batches of brittle today. But I am entirely in love with both items, and they pair beautifully with the Bloody Mary’s that mh and I have been enjoying all day. (Pics to follow once I log into tapa.)

Fudge: Brittle: And both are gluten and dairy free, but no one would ever guess. They are sooooo good!

I used 1T vanilla extract, and 1/2t mint extract, I used a hand mixer, a 7x11 baking dish, and pressed crushed candy canes into the top before refrigerating for an hour. Cut them into 45 squares and packaged 5 squares each into treat bags. They are really quite rich, but the recipe was so easy and fool-proof. It’s a great gift!
