Today - honey garlic ribs and rice Tuesday - tacos Wednesday - curry chicken and veg Thursday - lasagna Friday - chicken breast w/ sweet potato fries Saturday - stirfry

I'm making my meal plan today. I need one or two things that use celery and carrots that isn't crock pot chicken, potato soup, or lo mein.

I'm making my meal plan today. I need one or two things that use celery and carrots that isn't crock pot chicken, potato soup, or lo mein. you could do chicken noodle soup (or rice if you don't have noodles), I sometimes put celery in fried rice, and you can always do roasted carrots as a side for whatever meat you have on your menu.

We just got back on the wagon this weekend. Here's ours budget friendly list:
Mon: B- Scarmbled Egg, Avocado, Turkey Bacon L- Tuna Fish sandwich + blueberries/blackberries Snacks - apple + oatmeal/PB/almond milk protein bites D- Pork Roast in slow cooker and sweet potato
Tues: B - Avocado and Turkey Bacon Toast, cantaloupe L - Egg salad w Greek yogurt + apple Snacks - whole wheat crackers w PB + mixed peppers w hummus D - Leftover pork with cucumber salad on side
Wed: B - Oatmeal bites and protein smoothie L - BLT with avocado Snacks - Cantaloupe and Greek yogurt with honey D - Chicken Thighs, sautéed kale
Thurs: B - FREEBIE (coffee shop or other fast food) L - leftover chicken and kale Snacks - whole wheat crackers w PB + berries/banana/leftover fruit D - Vermicelli pasta with shrimp and veggies stir fried
Fri: B - Egg scramble on toast L - PB and J (hey it's easy and my favorite) Snacks - Oatmeal bites + Cherries D - FREEBIE (date night)

Mon - MH is going to an Astros game tonight so I will be eating wine. Tues- grilled cheese & sweet potato fries Wed -Italian meatloaf with mashe potatoes & green beans Thurs- herbed sirloin steak over orzo Fri - cherry balsamic pork chops with roasted potatoes & broccoli Sat - salmon with green beans and avocado Sun - dinner at the in laws' house

Re honey: we both put it in our tea and actively have to keep our multiple cups a day away from exploring hands. Lillian got honey on her 1st birthday. I was still freaked out.
Our week: Today: supreme pizza Tues: chicken pot pie Wed: bbq chicken with corn and green beans Thurs: Steak with couscous and steamed veggies Fri: Chicken and broccoli fettuccini Alfredo Sat: Chinese Sun: dinner with my dad

So aside from crock pot, do you all tend to stick to easy to prep/cook meals or do you find you have enough time to get creative/little fancy etc? If it's the latter, do you have any short cuts, tips, secrets?
Luckily we eat pretty "simple" but we both do enjoy cooking (when there's time, which there never seems to be)... so most of our meals have little or no seasoning or "dressings" other than a little salt/pepper/garlic salt/pre made season mixes.

kleigh my biggest tip/shortcut is that I have most of my prep work pre-done. When I buy my meat I immediately separate it and freeze it in portions that I will want. I buy my veggies and immediately wash, chop, and portion them (leave some out and freeze the rest). I'll even do this with stuff like broth. I made a big batch of vegetable broth one day and I froze it in 1 cup portions (flat in freezer bags) as well as in ice cube trays, so it's ready to go if I need a cup or 2 for a caserole, or a cube to throw in with some rice, etc.
