I'm running out of ideas on what to feed my kid for lunch every day. He's kind of a picky eater too. Hates sandwiches. I need inspiration.
What do you offer to your kids?

mac n cheese is the popular one.
Chicken fried rice is what I make to get him to eat some veggies.

Right now, the preschool feeds both my kids, but here's what I used to send when LBB was in daycare/a different preschool:
Sandwiches (peanut butter and jelly, coldcuts, egg salad or tuna fish) wraps (like a sandwich, but on lavash instead, or a cold version of a burrito with rice, beans, sour cream, and veggies) quinoa cooked with your favorite veggies fried rice pizza slices cheese and crackers pasta or pasta salad macaroni and cheese salads with chicken or black beans yogurt grilled chicken slices quesadillas stiry fry Asian noodles (pad thai, soba, peanut noodles) falafel, hummus, and pita Chicken tenders Sausage and peppers stromboli breakfast for lunch (bagel, eggs, or pancakes)

We do a lot of leftovers. LO is only 15 months and not at all picky which makes it easy. Today she is eating shrimp, tortellini, spinach and black beans. Lol
Desperation/ I have nothing meal is hummus and crackers or cheesy eggs.

We also do a lot of leftovers, mac 'n cheese, quesadillas, grilled cheese, and condensed soups when we're responsible for feeding him lunch. He also hates sandwiches, so what we do sometimes is a deconstructed sandwich - I'll give him the lunch meat rolled up, a slice of toast with butter or peanut butter, and then some fruit and/or veggies.

We do mostly leftovers also, but if there are no leftovers the chicken nuggets or taquitos with appropriate sides are usually on hand. We also do build your own lunchables a lot with triscuits, deli meat, and cheese.

DD(3) is crazy picky (hopefully just a stage?!?) and will consistently eat very few things.
Her favourite lately is sliced salami, cherry tomatoes, fresh fruit, cheddar cheese, and wheat thin crackers.

Quesadillas Diced prunes, cheese stick and crackers Veggie noodles with left over meat PB and puréed prune sandwich (toasted) Veggie tots Veggie muffins Leftovers Rice and black beans Salmon, white fish, black bean or chicken burgers
I usually round out each of his meal with either a pouch or frozen veggies
He's not a picky eater at all, and eats like a horse.

Meatballs? A brand I recently found called MamaMade are winners with my kids.
Spinach pasta with butter and Parmesan.
Quesadillas or bean and cheese burritos
PB/yogurt dip is yummy and can be eaten with fruit (bananas, strawberries)
Avocado toast
Tortilla Rollups? Spread cream cheese on a tortilla, layer turkey on top, roll and slice into pinwheels.

Here's the "formula" I usually use. Makes it a little easier to plan. A protein (meat, cheese sandwich, Greek yogurt) A carb (bread, pretzels, crackers) A fruit A veggie

Macaroni & cheese Noodles of any kind really- sometimes I'll sprinkle some shredded cheese over or she eats them plain too Smoothies Hot Dogs

For my picky 23mo old: Turkey dogs or hot dogs
Mac & Cheese (I'll mix in a few tbsp of pureed squash or sweet potato, since she seems to not notice)
Green peas, black beans
Hummus & pita chips
De-dippitted Apricots
Chicken Nuggets

Things I've done in the last week: Quesadillas PBJ on a tortilla Chicken nuggets Apple slices Blueberry bagel with cream cheese Deconstructed tacos (mostly she eats the shredded tortilla, cheese and meat) Steamed veggies

My go-to right now is meat, cheese, and crackers. Fried egg sandwiches are also usually a hit. DS often takes it apart and eats the toast and egg separately, so really he is having toast and an egg.
