We were out of town for the weekend so we didn’t make it to the grocery store. What pantry meals do you make?

We were also out of town! We have chicken thighs in the freezer and broccoli so probably something with that? Also italian sausage.

I think tonight I’m going to make some type of cheesy pasta with kielbasa and peas.
That’s all the plans I have. I need to go to the store.

we are so so bad at this.
but last night randomly made beef brisket in the crockpot over cauli mashed and it was pretty damn good.
I'm a broken record, but I'd really like to make some things the whole family will eat.

Is there like 1 thing everyone likes? ETA: not being snarky. Just trying to see if there is anything we can do to help or if you just need to vent. Bc that’s ok too.

Maybe spaghetti and meatballs. But I don’t really wanna be eating that 3x a week. Right. But if everyone will eat hot dogs, will they eat applegate farms chicken sausages in a bun? Then you can have the sausages and whatever side the kids will eat. If they will Eat French fries, will they eat cubes or wedges of roasted potato? If they will eat pancakes, will they eat gluten free or paleo protein pancakes with chopped spinach in it? Will they eat chicken or turkey meatballs? Will they eat meatballs in other ways? Like meatball subs in a hot dog bun? Or teriyaki meatballs over rice? I’m sure you’ve tried everything that I mentioned. But tastebuds change every few years. So it’s important for them to try it again. But maybe in a familiar way if that makes sense. Otherwise it’s time to teach M to cook! If the kids don’t want what I offer for lunch, then E has to make their lunches for them. I’m a mean mom.

I usually make some form of healthy chicken for one meal a week. The kids can get a dipping sauce if they want. Then I use it for wraps or salads during lunches.
I always roast or steam veggies as a side for everyone. Even if they eat pancakes they usually get veggies as a side.
Spaghetti I roast a spaghetti squash for me and skip the pasta for myself.
Pasta bake for the kids. I mix a low fat cottage cheese, egg, mozzarella and parmesan and stuff portabella caps. I toss the rest of the filling with pasta for them and bake it all together.
If I make pancakes I always scramble eggs on the side. Protein for me and for them.
I hardly ever cook for lunches now. This is where they can have "kid" food. Hot dogs, chicken nuggets, bagel and cream cheese, pb&j, corn dogs. I will make mac n cheese, but I tell them they can have it once a week only.
In no way am I 100% successful with this stuff. I tried a cauliflower taco bake last week. The kids were not happy. But this is definately a recipe I could modify. Roast cauliflower as a side one night. Then make individual taco bowls for us and regular tacos for the kids.

Yea TJ those are big nos all around. And M is perfectly content making herself cereal or pbj with a side of all the fruit.
She will at least try things. P will not. Not even near her plate.

Made grilled chicken thighs with a yummy marinade (brown sugar, garlic and onion powder, olive oil, lemon and lime, soy sauce) and grilled broccoli, served over jasmine rice.
Tonight we're probably doing sausage and peppers.

I meal planned for lunch. Salads for me every day because I'm definitely not eating enough vegetables these days.
I roasted Brussels sprouts, sweet potatoes, carrots and broccoli to throw in my salads.

We had instantpot butter chicken last night with rice and naan. Delish.

Mh made chili last night. So Yesterday and today is chili and cornbread.
He also made extra ground beef so that gives us tacos one night. And maybe Korean beef bowls?
Then we really need a lighter meal after all that beef. Maybe salmon and butternut squash?
Bada bing bada boom. Done.

I’ve got two delicate squash. Need an idea. I mean. I like it just roasted with maple syrup. But you could also stuff it. Or roast it in cubes and put it in a fried rice with a dark green veg like kale, Brussels sprouts, or broccoli. You could add the roasted cubes to a kale salad. Or make a roasted veg quinoa salad with a lime vinaigrette.

I’ve got two delicata squash. Need an idea. Delicata is really tasty just seeded, slice or diced, roasted and put in salad. I remember making a salad once a while back with delicata and arugala, but I can't the exact recipe. I really can’t emphasize enough what a mistake it was to move to a house without grocery delivery during a pandemic.
I miss my Albertson’s deliveries so much 😭
