brought to you by the hobby thread, we need to share chili recipes. i love a simple crockpot chili or an extravagant three pot chili. cream cheese based chili, chicken chili, beef chili, veggie chili, vegan chili, all the chili's! i'll tell you my favorite beef and chorizo chili down below in a few minutes.
be warned that if you put your recipe in this thread, it is 100% guaranteed to be made in my kitchen within the next few weeks.

Do you have an instant pot? You could probably do this recipe without you just can’t use dry beans then. redandhoney.com/instant-pot-chili-recipe/I do this one ^^^ but I add about a tsp of cinnamon. I do half and half with the diced tomato to tomato sauce ratio. I also cook for about 90 mins in the IP. 60 or whatever it says in the recipe is not enough for the beans to be soft. I’ve tried a lot of recipes and this has been my family’s favorite. If anyone else has a similar flavor profile recipe, I will definitely try it though. Chili is a winter staple here.

We just had chili last night. But, I don't use a recipe. Onion, garlic, brown ground beef, season with salt, pepper, chili powder, cumin, paprika. Drain. Add beans, tomato sauce (just a smidge), beef broth, jalapeños and chiles. Half a beer if i have it. Cook a long time til it's the right consistency and continue seasoning to taste.

so i like a chunky chili instead of a soupy chili. i combined two different recipes for this one so it's this link - www.girlversusdough.com/dads-beef-red-wine-chili/but but buttttt i add in finely ground chorizo and it really makes a huge difference.

This one is spicy and I love it. I have made it at least 3-4 times since I found the recipe in the middle of the summer. I use my Ninja Foodi but there are instructions for a crock pot or instant pot too. It’s so yummy. It’s also super quick and easy to make in the foodi. thesaltedpepper.com/quick-chili/

This recipe is from a beloved GBCN poster (V) who passed away a few years ago. I halve this recipe because it’s enormous but very delicious. This is copy-and-pasted from her own words.
Chili
2 lbs. Sirloin steak, cubed
2 tubes of pork sausage (hot or mild)
2 lbs. Ground sirloin
salt
garlic
ground cumin
chili powder
cayenne pepper (if desired)
1 large can crushed tomatoes
1 large can diced tomatoes
1 small can tomato paste
1-2 large white onions, diced
1 can each light & dark kidney beans, drained and rinsed (if desired)
Tips
Cayenne powder is optional and you can skip it if it’s too hot, but there’s really no such thing as chili that’s ‘too hot’.
The kidney beans are optional. Some people (TEXANS) are so hardcore about beans having no place in chili but I’ll use them occasionally. You can also substitute pinto beans if you prefer.
The other seasonings (salt, garlic, cumin, chili powder, and onions) are to your own personal taste. If you like a lot of garlic, use a lot of garlic. Same thing with onions, cumin, etc.
Some people like green bell peppers in their chili. I do not like green bell peppers so they aren’t in my recipe, but you can add it if you like.
Start by seasoning (to your own taste) the meat with salt, garlic, chili powder, and ground cumin. Put the meat in whatever pot you are going to use and add just a little bit of oil so the meat doesn’t stick. The fat from the sausage should be enough to make the meat not stick but add more oil if you have to. Add in ½ of the chopped onions and continue cooking until the meat is very brown and the onions are translucent. Add the can of tomato paste to the meat and continue stirring until all the meat is covered. Add 1 cup of water (or beer) and stir to loosen up all the brown bits on the pan.
Add in the remaining ingredients (tomatoes, onions, beans) and then add enough water to cover the entire mixture.
If you want your chili hot, add in a good tablespoon or so of the cayenne pepper. Let simmer until meat is tender.

Just made this last night! It's my favorite. I dont use a crock pot, I just use a rotisserie chicken on the day I get groceries, bc lazy, and simmer for 30-45 min then add the cream cheese.

I made chili Friday! I season to taste and have no idea on amounts. Just season liberally. Eta- obvs go heavy on the chili powder and light dashes of cinnamon.
Brown 1 lb ground beef with spices (chili powder, paprika, cumin, cayenne, onion powder, garlic powder, salt & pepper, cinnamon)
Throw it all in the slow cooker with 1 can of kidney beans, 1 can of black beans, 1 can of corn, 1 can diced tomatoes, 1 can tomato paste, 28 oz can of tomato sauce. I don't drain anything, just throw it in. Cook on low for 8 hours & serve with jalapeno corn bread.
Etaa-you can obvs use diced onion and garlic but I'm lazy and chili is just my dump and go meal.

We love this one, too! No paleo in this house, either. I use a packet of Cincinnati chili seasoning in it. So good.

I made chilli on Friday! I use ground beef, ground venison or ground turkey and it all comes out delicious no matter the protein. I don't measure my spices but I can give a rough estimate lol. I do it on the stove or in my IP. I use a pound to a pound and a half of meat. It just depends on what I have.
Over medium heat saute one onion and one bell pepper in avocado oil with a good pinch of salt until softened. Add your meat and another good pinch on salt and pepper and brown that. If you use a fattier ground beef you may need to drain it. After the meat is brown I add 4-5 finely chopped garlic cloves and saute them about a minute. Then I add a whole can of tomato paste and saute that for another minute or two. A few good dashes of worcestshire sauce. Now it's time for seasonings. I do:
Chili powder (maybe 4 Tablespoons) Cumin (maybe 1.5 teaspoons) Smoked paprika (half tsp) Regular paprika(1tsp) Coriander (half a tsp) Onion powder (1 tsp) Gralic powder (1tsp) Oregano (1tsp) Cocoa powder (1.5tsp) Brown sugar (2 Tablespoons maybe?) A pinch of cayenne (more if you like it super spicy obviously)
I add all the spices and saute another minute. Then I add a can of fire roasted diced tomatoes. Use the tomato can and add one can of water. Add a can of rinsed kidney beans. Bring it up to a simmer and let it cook for 20 minutes. I taste and adjust seasonings as needed at this point too. It should be pretty thick. If you want it thinner you can add some more water.
It's so damn good. Savory, rich, a little sweet, spicy. Yummmm. I serve it with cornbread. Top it with cheese, sour cream, diced avocado. *chef's kiss*

I’m picturing you slicing every chickpea in half. 😂 If it makes you feel better though, I do sometimes individually peel chickpeas to make hummus. It’s ridiculous and I get angry every time I have to do it.
