Monday is memorial day and also my H's birthday. We're going out for dinner Sunday because he wants to grill Monday. So we're having ribs, grilled potatoes, and probably corn. This for dessert. I usually bring a baked Brie to pot lucks and people go crazy for it. It's almost embarrassingly easy. Wedge of Brie. Crescent rolls in a can. Apricot jam.
Cut rind off Brie, cut in half. Unroll crescent rolls, put half down on a pie plate and smush down. Spoon some jelly over it, place the two wedges side by side, spoon more jelly, place second half of crescent rolls over top. Smush around until the Brie is covered and it resembles a pie.
Bake at 350 until it's golden brown and bubbly, serve with crackers.

Oh yes, my other favorite corn side: Grandma Marie’s Corn Casserole INGREDIENTS ½ cup butter ¾ cup chopped bell peppers ⅓ cup diced onion 1 7 ounce can whole corn, with liquid 1 7 ounce can cream corn 3 beaten eggs 1 cup shredded cheddar cheese 1 box jiffy corn muffin mix DIRECTIONS 1. Preheat oven to 350 degrees F. 2. Grease a 9” by 13” baking dish. 3. Sauté peppers and onions in butter until soft. 4. Pour peppers and onions (and melted butter) into baking dish. 5. Add the rest of the ingredients to baking dish. Stir gently until mixed. Batter will be lumpy. 6. Bake for 50 to 60 minutes, until lightly golden brown and set.

I love these sorts of recipes. I've also grilled corn on the cob and then used that in the salad. Obviously, that was pre-kids when I had ample time to cook. I was also probably living in Iowa still where I could get amazing fresh corn. The supply is North Carolina is suspect at best.

I can give you my great grandmother's amazing recipe for literally the best mac and cheese in existence...
3 cups 2% milk 1/2 of one of those big bricks of Velveeta - or one of the small bricks 1 pound shredded cheddar 1 stick butter 1 pound macaroni noodles Salt
use the stick of butter to grease a 9 by 13 glass casserole dish. Cut the rest of the stick up to use in the recipe. Put 3 cups milk on a sauce pan and heat it up along with the sliced up butter, half of the shredded cheddar, and all of the velveeta. Add a dash of salt. Meanwhile, boil the macaroni noodles in salted water for 8 minutes. Then remove from heat and drain. mix the cooked noodles with the cheese sauce you just made. Dump it into the greased casserole dish. Top with a little salt. Top with the rest of the shredded cheddar. Bake at 350 for 20 minutes.

My favorite pot luck side is
Rice Black beans Kidney beans Corn Chopped red pepper Chopped red onion Chopped cilantro
Toss together with a cilantro lime vinaigrette. Can be eaten with a fork or shoveled in your mouth with tortilla chips.

chickenonsunday, I used to live in PA and buy corn fresh from the local Amish farmers. Just amazing corn, SO GOOD even with absolutely nothing on it. But alas, I moved and here our corn mostly comes from Florida, or is more fit for cattle. But, even with mediocre corn that recipe is pretty amazing.

How far do you have to drive? Do you have the ability to keep the dessert cold once you get to the shindig? 4 block walk to the bus, 25 minute bus ride and then another 6 block walk. But there will be refrigeration once I get there and it's not supposed to be terribly hot. How about a super easy pie recipe? Either make (or buy) a graham cracker crust or go with a regular crust. Both are delicious. My aunt always makes this for family gatherings. She stops the pie with more dream whip (or cool whip) and then does some chocolate shavings. SAVE RECIPE Ingredients Nutrition SERVINGS 8 UNITS US 2 (1 1/3 ounce) envelopes dream whip brand whipped dessert topping mix 2 3⁄4 cups cold milk, divided 1 teaspoon vanilla 2 (3 1/2 ounce) packages jell-o brand instant pudding mix, any flavor (I suggest chocolate) 1 baked graham cracker pie crust Directions Beat whipped topping mixes, 1 cup of the milk and vanilla in large bowl with electric mixer on high 6 minutes or until topping thickens and forms peaks. Add remaining 1-3/4 cups milk and pudding mixes; beat on low speed until mixed. Beat on high speed 2 minutes, scraping bowl occasionally. Spoon into pie shell. Refrigerate at least 4 hours. Garnish as desired. Store leftover pie in refrigerator.

I have two weddings/rehearsals for the weddings to work at this weekend, so I'm mostly looking for fast holiday food. We might get Indian takeout on Saturday and probably do the brat thing on Monday. What's a good fast dessert for me to make for my friend's shindig on Sunday, though? Strawberry shortcake (buy an angel food cake from the grocery store) Brownies are fast an easy. I like to spread a jar of marshmallow fluff over them and then put fudge frosting on top.

Mayo free pasta salad:
Cucumber Tomato Red onion Feta cheese Multi colored spiral pasta Italian dressing
Chop all veggies and combine with cooked pasta. Add feta cheese and pour dressing over until everything is coated. Chill.
So good at a hot summer cook out.

Warm Spinach Salad
8 ounces young spinach 2 large eggs 8 pieces thick-sliced bacon, chopped 3 tablespoons red wine vinegar 1 teaspoon sugar 1/2 teaspoon Dijon mustard Kosher salt and freshly ground black pepper 4 large white mushrooms, sliced 3 ounces red onion (1 small), very thinly sliced
emove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside.
Place the eggs into an electric kettle and cover with cold water by at least 1-inch. Turn the kettle on. Once the water comes to a boil, the kettle will turn itself off. Leave the eggs in the water for 15 minutes. Remove and peel off the shell. Slice each egg into 8 pieces and set aside.
While the eggs are cooking, fry the bacon and remove to a paper towel to drain, reserving 3 tablespoons of the rendered fat. Crumble the bacon and set aside.
Transfer the fat to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper.
Add the mushrooms and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls and evenly divide the egg among them. Season with pepper, as desired. Serve immediately.

Tri color pasta, grape tomatoes, black olives, chopped carrots, red onion, peppers (yellow, orange or red), celery. I don't usually add feta or any cheese, but I think I should. I'm not a fan of pasta salad w/ mayo in it.

Go put the recipes in the recipe board so I can find all the new ideas Bonus points if someone figures out how to arrange that board so we can find the recipes when we want something new for dinner. My board We used to have an ocd person who kept an index updated at the top stickied thread so you could find what you were looking for. They had too much time on their hands Do you want hawkward and I to make a post about salad recipes containing mayo? I think it would be a real crowd pleaser.

I will share a receipe that I LOVE Oriental Salad Ingredients 1 16 - ounce package shredded cabbage with carrot (coleslaw mix) 4 green onions, thinly sliced 1 3 - ounce package chicken-flavored ramen noodles, broken up 1/2-3/4 cup slivered almonds, toasted 1/2-3/4 cup sunflower nuts 1/2 cup salad oil 1/3 cup vinegar 1 tablespoon sugar 1/8 teaspoon ground black pepper Sliced green onion (optional) Directions Combine coleslaw mix, green onions, ramen noodles (set aside seasoning packet for the dressing), almonds, and sunflower nuts in a salad bowl. Chill, covered, until serving time, up to 1 hour. For dressing: In a screw-top jar, combine oil, vinegar, sugar, pepper and seasoning from the package of noodles. Cover and shake. Chill until serving time. Before serving, shake dressing; pour over salad and toss to coat. If you like, garnish salad with additional sliced green onion. This stuff is addicting!!! I have actually used it as a slaw with ground pork to make Korean tacos before and it's really good that way too.

Yes! We usually do the usual meats Hamburgers Hotdogs Ribs Sides Cheesy potatoes Pasta salad Fruit Baked beans Corn on the cob Apps Taco dip Chips and dip I want to try blt pasta salad too I loooove BLT pasta salad! Just make sure you mix in the lettuce right before serving so it doesn't get soggy.
