So we went out to the garden yesterday to check on the veggies and two days ago, I had seen a couple of tiny zucchini starting to grow. Last night, I discovered a zucchini the size of my forearm! So I guess zucchini season has begun.... any ideas for what to do with this monstrosity, besides leaving them as gifts in my neighbor's doorstep? Sent from my iPhone using Tapatalk

That looks really good. MH is vegetarian and I try to eat lowish carb so it is often hard to find dishes that fall in both categories. I think we will try that this week!

You can slice them lengthwise with a mandolin slicer and use them for lasagna "noodles." Or sub half of the pasta for zucchini slices. Last night I cooked spiralized zucchini in olive oil with fresh garlic, herbs, and tomatoes. Topped with asiago cheese. That was delicious.
