Sunday: Spanish rice, Field Roast chipotle sausage, fajita veggies Monday: fend for yourself. It's stitch removal day so I told Pete to stop at the bakery by the pedi's office and get Dude a vegan blueberry donut. Dinner of champions Tuesday: lemon rice, chickpea coconut curry Wednesday: black bean and sweet potato chili Thursday: leftovers Friday: mandarin "chicken," vegetable fried rice Saturday: out?

I seriously have no idea what mh bought at the store yesterday, so I don't know what our meals will be. Should be interesting since I cook them.

I have so far is tonight: Chicken Parm, pasta, and salad. I'm trying to find a bunch of make ahead meals that I can put together first thing in the morning and store them in the fridge until they're have to go in the oven or even something that can be served cold or room temperature. I might even try to find summer-ish crockpot meals. I just don't want to stop mid day in the summer to cook (even though I love it).

I have no idea. We've eaten weird all week since grocery shopping with sick kids is challenging to say the least. Watching this to get inspired.

@wine, Blueberry feta and walnut salad sounds good. We always do cranberry, blue cheese and pecans. I have all the ingredients for your salad. Are the blueberries dried or fresh? And over mixed greens? What kind of dressing do you make/use --something lemon based?

@wine, Blueberry feta and walnut salad sounds good. We always do cranberry, blue cheese and pecans. I have all the ingredients for your salad. Are the blueberries dried or fresh? And over mixed greens? What kind of dressing do you make/use --something lemon based? Fresh blueberries! MH always makes it. He either uses spinach or arugula typically. Dressing is a lemon, honey, olive oil I believe. So good!

We are grilling everything today cause I don't want to cook this week:
Ribeye steaks Grilled marinated pork chops Chicken Satay with Thai peanut sauce.
Sides of pasta salad and garden salad.
Grilling lots so we can just have "leftovers" all week. Then just take out next weekend.

A box of rigatoni, chopped up peppers, red onion and black olives, mozzarella and Colby jack cheese (I just buy a bunch of string cheese sticks and cut them up) and a few thick slices of honey Turkey or honey ham from the deli, also cut up. Toss it all together with Italian dressing! Good leftover too!

guster I don't know if you like couscous, but this is an easy meal that holds really well and that you can eat Luke warm or cold on the second day. -Make couscous as stated on the box, let cool - Dice an aubergine and courgette into smallish cubes, sauté and let cool - cut spring onions/iceberg lettuce/fresh tomato add this to the couscous once its cooled (if you want to eat it luke warm leave lettuce out) - crumble up some walnuts for added texture Throw everything in a big bowl and season whichever way you like, I often use paprika. - make a yoghurt and mint sauce by just mixing yoghurt with mint leaves and a little lemon - fry chicken/lam/beef (it's nice if they have a herby marinate) strips and ad to the cooled couscous Spoon over some of the yoghurt and you have a great summer dish!

guster I was thinking along the same lines as xolastunicornxo. We do a "chicken" dill pasta salad. Rotini noodles, Gardein chicken tenders, vegenaise, fresh (or dried) silk, black olives, raw carrots and broccoli. Sent from my iPhone using Tapatalk
