I know we’re all swimming in a sea of leftovers, but what’s on the menu this week?
Aka I’m making my grocery list and I need some inspiration
QOTW (because I’m really taking advantage here): what’s your favorite go to snacks for the kids?

Tonight, leftover chili Tues - Grilled pork loin (probably a toned-down version of this amazing dish, only because the original is a little spicy for the kiddos), sautéed peppers and onions, broccoli Wed- Steak, steamed broccoli, baked potatoes Thurs - I'm on my own, so probably bucatini with garlic, ricotta and tons of veggies. I'l throw it together on the fly. Friday - Traveling Oh QOTW: go-to snack for the kids is usually cheese and some kind of fruit (typically grapes or apples)

Mon- chili
Tues- out for DH’s birthday
Wed- sausage with peppers and onions and baked beans (over cauliflower rice for me)
Thurs- salmon, broccoli, cauli rice
Fri- shredded chicken something. Haven’t figured it out yet.
Back when B used to eat hummus that was our favorite snack. I’d get the carrot chips or pita chips and the kids will go to town. Also black beans. Straight from the can.

Today - Dh is in charge because I'm at worm
Tuesday - chicken clubhouse sandwiches
Wed - broccoli alfredo
Thurs - probably a roast or chicken
Fri - Curry
Sat - ????
As for snacks we keep it pretty simple. Fruit is the main thing. I also make muffins fairly regularly, and have stuff like applesauce, granola bars, yogurt, veggie chips, etc.

We are still in thanksgiving left over land: S - “pulled bbq turkey” sandwiches w tots and baked beans M - hello fresh vitamese chicken bowls T - turkey tacos W - hello fresh spinach raviolis R - takeout F - ? S - block party
We always throw 1 take out night in there a week, not necessarily Thursday. Just when I don’t feel like cooking.

We are in leftovers land... and also, I wayyyy overspent on Thanksgiving food so I promised MH I’d use what we have on hand this week (except to buy fresh produce):
Monday: Ham (I’ll never eat ham again after this), sides of roasted carrots and mashed potato, dinner rolls
Tuesday: Pyzy (polish dumpling type thing) sautéed with onion, side of green beans
Wednesday: Breaded chicken breasts parm style with sides of broccoli and Brussels
Thursday: Breakfast for dinner/ Omelets for me and MH and AV, Oatmeal with fruit for AB.
Friday: Grilled cheese and tomato soup for kids, me and H are going to a holiday stroll with friends so I’ll probably drink my dinner esp since wife is pregnant and volunteered DD.
Saturday: Meatloaf most likely, kids don’t like my cooking (grandma and Babcias only), this is the one thing they’ll eat.
QOTW: Tons of yogurt, fruit (banana, blueberries, clementine oranges, and apples), cheese, and Cheerios believe it or not.

Mon - some casserole thing with tater tots & ground beef/cheese Tues - Pork tenderloin with brown rice and green beans Wed- leftover casserole Thurs- Chicken with asparagus & roasted potatoes Fri - quesadillas

My quesadillas always come out like shit. What am I doing wrong? tgrimes It’s like they don’t get gooey and melted, and the tortilla seems thick and tough or something.

Chicken wraps - I use coconut aminos and it's amazing Grilled chicken, asparagus and potatoes (lol tgrimes, apparently your H and I had the same idea!) Burrito bowls Short ribs Red Robin tomorrow for DS's birthday.

My quesadillas always come out like shit. What am I doing wrong? tgrimes It’s like they don’t get gooey and melted, and the tortilla seems thick and tough or something. Possibly your tortillas. I get them fresh from our grocery store. I have used store bought ones before and a lot of times I'll just flip them on a pan on the stove rather than putting them in the oven. Or you could be putting too much stuffing in the quesadilla.

I do mine no higher than med. Too hot and the tortilla starts to burn before the cheese has a chance to melt. If I put in a lot of stuffing, I'll pop a lid on while it cooks on side 1 so that it gets more heat (I do that for grilled cheese, too). It seems to help. The lid will also keep steam in the pan so that the torts are steaming while it cooks. That may help keep it softer.
Although I admit I like my tortillas pretty crispy and fullllll of cheese.

Thanks for the tips! tgrimes sophiegrace waitwhat starbuck It might be the tortillas I’m picking or I’m over stuffing. And like you say starbuck, that’s partly my problem - tortilla seems crisp and burnt before things have begun to melt together.

Girl if you get amazing quesadillas cheat all you want. I should whip that bad boy out for football snacks this weekend. We’re hitting up the fancy grocery store in the next state over this weekend so I’m hoping to find a non corn gluten free tortilla for H. kleigh I think it works so well because it has a lid to keep the moisture In and cooks it slow at a low heat. I think.

QOTW: lately it’s PB on crackers or a banana. She’s picky so it’s been hard to know what she’s going want and actually eat lately. I’m sick of throwing food away or having to eat a snack I don’t really want.

Today: thanksgiving leftovers
Tuesday: salmon with rice and roasted broccoli
Wednesday: steak, steamed green beans, some sort of sweet potato
Thursday: rosemary chicken thighs with roasted red potatoes and carrots
Friday: meatloaf sounds really good! So that with red cabbage and a carb.
Saturday: take out
Sunday: I’ve been wanting to make football goodies lately but lacked the drive. Maybe quesadillas and a homemade variation of hot wings.
