If anyone is looking for a delicious, quick dinner tonight I took one of those microwaveable vegetable pastas from birds eye (Alfredo) and added in some jarred Aldi pesto, frozen peas, and frozen shrimp. DD1 are more than I did and DD2 are the peas and pasta. It took >10 minutes to come together on the stove top.
Meal plan for the rest of the week: - chicken pot pie - salmon, salad, and starch or carb - fettuccine with leftover salmon and spinach - Halloween chili - chili over cauli rice - possible date night/pizza

My week: Sunday: CT sleepytime beef stew, mashed potatoes, chocolate tart, salad Monday: leftovers Tuesday: pulled pork sandwiches, coleslaw, sweet potato fries Wednesday: pizza/out for Halloween Thursday: pulled pork mac & cheese, salad Friday: leftovers Saturday: cacio e pepe, balsamic grilled chicken, bruschetta

That sounds super yummy Leaf 🌱. I have some vegan alfredo sauce in the freezer so maybe we'll use that up this week. and -chickpea and spinach stew served over rice or quinoa -sheet pan sausage and veggies -burrito bowls -breakfast for dinner, maybe sweet potato hash with eggs and bacon

Thanks snowmoon - DD2 asked for seconds which always strokes my ego a bit. I’m working on having some semi-healthy, semi-homemade meals ready to go in the house. DH has been traveling A LOT and I need things that can be made in less than 20 minutes with only one hand. And I can only let DD1 eat Chick-fil-A like... twice a week before I feel like a crappy mom 😂

Sunday: Enchilada quinoa casserole, arugula salad, flourless chocolate almond cake
Monday: we're having my parents for my mom's birthday. cod in parchment paper with olives and lemon, glazed carrots, jeweled rice. Banana cake for dessert.
Tuesday: beef and broccoli with udon noodles
Wednesday: spaghetti pie, caesar salad, garlic toast
Thursday: chicken burgers, coleslaw, roasted beets
Friday: homemade pizza. Hope to make sugar cookies with DS for dessert
Next Saturday: hopefully leftovers

thanks for starting this Leaf 🌱 these always help me when i’m in a rut! tonight: pizza at in-laws monday: lentil spaghetti with meat sauce, roasted carrots and parsnips tuesday: chicken sausage, roasted broccoli with lemon, rice wednesday: sheetpan chicken tikka with sweet potatoes and cauliflower thursday: leftovers friday: mandarin chicken, rice, green beans saturday: stir fry cauliflower rice and chicken

Leaf 🌱 I like threads like these, they give me inspiration. Here's our whole week: Sat-pumpkin mac and cheese with cubed ham, spinach salad Sun- grilled ribeye steak, baked sweet potatoes, bbq ranch salad Mon- chicken sausages, roasted veggies (fennel, butternut squash, onion, mushroom, parsnips) Tues- H and the kids are having leftover mac and cheese, I'm working late and having a salad Wed- Cauliflower rice and beef taco bowls Thu- shrimp tikka masala with leftover cauliflower and a curried salad mix I bought at wegmans Fri- DS has soccer. Pizza night.

This week: Yesterday we had steaks, veggie tots, and applesauce Tonight is chili Tomorrow will be leftovers or something easy Thursday either BBQ chicken or pulled pork Friday will probably eat out I haven't planned for the weekend yet.

We have been making loads of protein on Sunday to last us through the week.
This Sunday I roasted chicken quarters and we had that with butternut squash and quinoa.
Last night was leftovers from Saturday (Salisbury Steak with Mac n Cheese)
Tonight we are taking some of the chicken quarters and using that to make chicken soup (chicken, carrots, onion, egg noodles, boxed chicken stock and a chicken bouillon cube)
Wednesday is pizza night (trick or treating)
Thursday will depend on how much chicken we have left but it will prob be make your own chipotle bowl - rice, beans, chicken, cheese, guac and salsa
The rest of the week is up in the air!

If anyone is ever looking for really yummy recipe suggestions, i've gotten really obsessed with carlsbadcravings.com lately. I have tried like 15 of her recipes any have not been disappointed in any. They take a lot of ingredients but it's usually just a lot of spices so not overly long to make.
It's helped me step up my marinade game.

They take a lot of ingredients but it's usually just a lot of spices so not overly long to make. It's helped me step up my marinade game. FFFC I don’t think I’ve ever marinated a damn thing. No, me neither! But a lot of her chicken/steak recipes you marinade overnight so the actual amount of work at dinner time is smaller. And it makes such a HUGE difference on taste. I'm a marinade convert.
I make her balsamic chicken for lunch at work with a bunch of roasted veggies and it's so good and healthy.
