I get bored of chicken. I have found that you have to be careful with the turkey though, it does get chewy or dry out faster than chicken, if overcooked. The IP is my friend with turkey!

wineallthetime Like mwhip said, we love doing roast turkey breasts...so easy in the oven. You can buy the frozen kind and cook it without thawing first (just takes an extra hour or so), and it makes enough leftovers for sandwiches or another meal. Also, you can get turkey tenderloin, which I guess is like pork tenderloin--they are easy to prepare in the oven or on the grill, too, and really good.

Tonight: steak, asparagus, mushroom & rice casserole Tuesday: lasagna and salad Wednesday: leftover lasagna Thursday: roast turkey breast (I've been inspired by this thread, ha!), baked sweet potatoes, brussels sprouts Friday: out Saturday: chicken enchiladas and rice

I usually do 3 chix breasts cut in half vs. six whole. Saves on cooking time too. You could do the topping with Ritz crackers instead of pork skins or leave it off all together.

This is for the kids/Pete. No idea what I will be eating yet:
Sunday: blueberry pancakes, turkey bacon, hash browns Monday: Skinnytaste chicken with green beans, rice pilaf Tuesday: skinnytaste turkey crockpot meatballs with spaghetti and garlic knots Wednesday: zucchini and tomato frittata, apple chicken sausage Thursday: skinnytaste bell pepper turkey nachos, rock creek ranch black beans Friday: at a wedding Saturday: probably fend for yourself
I'm sure X will eat nothing, and Dude will only want hard boiled eggs and apples every night, so I guess Pete will be eating tons of leftovers
