I have two lbs of loose breakfast sausage that needs to be used. I can either make things to consume now or cook up a sauce and freeze it for later. What should I make?

You can also just cook the sausage as is, and freeze it in two 1-lb containers. Then you can decide what to use it for later. Sprinkle it in quiche or a breakfast bake, use it to spice up spaghetti sauce, thaw and add to scrambled eggs for breakfast tacos, whatever. Just saves you a step later.

My FIL makes some kind of bread with sausage and cheese rolled up together.

I make extra special hamburgers by mixing 1 pound hamburger with 1/2 a pound of sausage then add some breadcrumbs or crushed crackers, an egg, and some chopped onion. I also will cook it and freeze is small portions to use for breakfast burritos or as a pizza topping later.

How is it seasoned? Can you add some Italian seasoning and use it for lasagna or spaghetti sauce?
