DH is going to be on a business trip next week and I want to use the opportunity to cook foods that he doesn't like. That means lots of salads for me, but I need things that are palatable for the kids too. And easy enough to make while I'm solo. Definitely mushrooms. Maybe summer squash/zucchini. Maybe some lighter dishes. But what dishes? The kids love pasta. Actually, C loves the sauces on pasta and M loves the pasta itself. I did just buy the Instant Pot, so fun things in there are good too - regardless of their DH detestment status. Special food is how I have fun when DH is gone. Help me have fun.

Oooo, those mushrooms look so good. And leafy greens are another no-go for DH, so I should get some of those at the Farmers Market tomorrow.

I made the chicken shawarma salad/flatbread thing someone posted a while ago. It was freaking delicious. And R loved it. I just skipped giving him the lettuce. He gobbled up everything else (chicken, naan, hummus, feta, cucumber, avocado, etc)
Then you make yours a salad.

He gobbled up everything else (chicken, naan, hummus, feta, cucumber, avocado, etc) Then you make yours a salad. That was me it's my new favorite meal.

I've eaten it both piled on the naan like a big messy salad and I've made the salad and served with naan on the side. I prefer to make the salad on top of the naan and kind of eat it like a wrap, it's super messy but sooooo amazing.

However. We just had smoked trout, asparagus, purple onion, and fingerling potatoes in a salad with arugula and a pickled mustard seed vinaigrette dressing.
I was SHOCKED at how good it was, and how much my kids liked it. I would be happy to PM you the recipe.

We love baked salmon and fish tacos also. However. We just had smoked trout, asparagus, purple onion, and fingerling potatoes in a salad with arugula and a pickled mustard seed vinaigrette dressing. M loooved the fish, not so much on the potatoes (too much pepper). C was all about the cherries.
