We have a cookout next week and I would like to bring some "summer" cookies.
Criteria: -Easy/fast to make -Nothing too heavy -Preferably not a lot of expensive ingredients -Kid friendly flavor profile
My go-to cookies are yummy, but better suited to winter (various PB and chocolate) or labor intensive (cut out cookies).
Cupcake recommendations are also welcome, but cookies are preferred.

I love the butter waffle cookies from TJs. Also, their new PB cartwheel cookies are so good.

Easy lemon bars from a cake mix
1 package Duncan Hines Lemon Supreme Cake Mix 1/2 cup butter, softened 1 large egg 14 oz can sweetened condensed milk 1/2 cup lemon juice
Stir together cake mix, butter & egg. Spread evenly into a greased & floured 13x9 pan. Blend sweetened condensed milk & lemon juice. Pour over cake mixture. Bake for 23-25 mins at 350. Cool completely on wire rack. Cut into bars & refrigerate.

Monster cookies are my go-to these days. They’re a Hit in my son’s kinder class.
No bake cookies are next.
Or I would do cookie bars as mentioned.
I don’t really associate different cookies with different seasons. Ok- I guess gingersnaps and cutout are my go-to’s for Christmas.
But really nothing beats a good chocolate chip cookie anytime of the year.

If you want to do homemade I have a S’Mores cookie recipe. It’s basically a modified chocolate chip cookie batter, but with graham cracker crumbs. Then in the last few minutes u sprinkle on some chopped up Hershey bar and mini marshmallows. People seem to like them.
Also any kind of lemon bar/cookie is usually good for summer.

Thumbprint cookies with strawberry or peach preserves, lemon bars. My mom made mini cheesecake cupcakes with fresh strawberry topping a lot for summer parties. You could do blueberry too.

Icebox strawberry shortcake. Line the bottom of a baking dish with graham crackers, top with cool whip, then sliced strawberries. Repeat the layers. Freeze until solid. Let it sit out for a bit before cutting into it. It's always a hit with kids.

Not exactly cookies, but rice crispie squares and hay stacks (just chow mein noodles and butterscotch), plus the no bake cookies already mentioned, are my summer go tos.

Oh my god I know what I'm making after this baby comes out 🤤 I forgot to mention. Under bake them slightly. I usually don’t bake them longer than the lowest amount of time it says in the recipe. They are so moist that way.
