Any bakers out there? I have a question about how far in advance I can decorate a cake and leave it in the fridge. I'll be using buttercream icing.
Context: I am baking a two tiered cake for one of my bffls and need it on a Saturday. I had planned on decorating it on the Friday before, but now I have a moms night out I'd like to go to. Can I decorate it on Thursday and will it still be good for Saturday (and a bit after - leftovers), or do I just decorate on Friday?

You can decorate it Thursday and it'll be fine on Saturday. It can actually be stored at room temperature for up to 3 days, but if you want to keep it in the fridge then put it in unwrapped until the frosting hardens a bit and then lightly wrap it with plastic wrap.

Look into making a simple syrup to keep the cake moist. My mom makes wedding cakes and it’s the best trick to keeping the cake fresh.

jubilantsquirrel, Radley, and anyone else who can help... so yesterday I baked a cake and put it in the freezer. I wrapped it twice with press n seal and once with foil. Today, I decided that maybe it needed a second layer of foil and now it's got ice crystals forming on the outside of the second layer of foil. Will the cake still be good? Should I take the second layer off or leave it? Thanks in advance

Now there are on the second layer of foil I would think it’s probably okay. As long as the cake wasn’t frozen warm, it’s usually fine. Whether you take off the extra or not shouldn’t effect the cake.

I froze a cake last summer for my daughter’s birthday. It was room temp. I wrapped in foil once and placed in ziploc bag. I have no idea if there were ice crystals but the cake thawed and tasted great!

I haven't decided if I should deliver it stacked or stack when I get to her house 😫 Are you attending the event or just dropping it off ? If attending, I would bring it unstacked (but have your dowels in the bottom cake, so you just stack & do your final boarder & decor (obviously get there a bit earlier, give yourself 45 mins ) If not attending, I would drop it off stacked & fully decorated.
