I know we talked about freezer meals, but I thought we could share recipes for easy meals. I made this for dinner last night. One pot and ready in about 25 minutes. www.missinthekitchen.com/easy-cheese-tortellini-with-meat-sauce/A few changes that I made... I used ground pork instead of beef for more flavor I also used the diced tomatoes with garlic, oregano and basil (DelMonte) I used fresh tortellini (Rana brand from the grocery store)

This is something I struggle with in the winter, but in the summer it's way easier because we grill or eat salad a lot.
Last night I made homemade coleslaw and grilled some bratwurst. It took 20 min total.
For the coleslaw: 1/2 head cabbage, 2 carrots, 1/4 onion shredded in the food processor. Add 1/2 cup mayo, 1/4 cup greek yogurt or sour cream, 2 tablespoons sugar, 2 tablespoons red wine vinegar, 1 tablespoon celery seeds, salt to taste.

frecklesnbrains , H said he really liked it, but thought the tortellini made it a heavy for the summer so it would be perfect for winter. I love grilling in the summer, but like it better when H does it. That has been hard lately because he has been getting home so late. Hopefully, work will settle down for him soon.
