If you are into museums and history I would go to the Backstreet Cultural Museum.
I would have you walk down Pirate's Alley and see the metal horse posts up and down the street where people used to really tie up their horses back in the day.
I would walk Jackson Square and pick a street artist to draw a portrait or a caricature.
Or take a Steamboat Natchez ride.
I would go to the Voodoo shop to say you did.
I would get you a poboy at Killer Po-Boys on Conti St. OR Domilise's
You definitely need to get beignets at Café DuMonde.
I would bring you to a Second Line on Sunday.
Cocktail hop - Sazerac at the Sazerac Bar, Vieux Carre at the Carousel Bar, Hurricane at Pat O Brien's, a Monsoon at Port of Call.
If you are there on Tuesday you can check out the Rebirth Brass Band at the Maple Leaf.
You can get .25 martinis at Commander's Palace during lunch on weekdays. Limit 4.
If you don't have the time or money for the Natchez boat ride. I would take you on the Canal St Ferry. You get great views and it's FREE.
Odd things you can see - Nic Cage's pyramid he is to be buried at, F Scott Fitzgerald's boarding house. If you go to the house there is Lafayette Cemetary #1 across the street. Voodoo Queen Marie Laveau's tomb is in there.
Ye Olde College Inn has a good gumbo.
Cane and Table has an all you can drink brunch Sat.
Cochon - if you are interested in trying fried alligator, boudin, they also have good catfish.
Casamento's if you are into oysters
Ruby Slipper - brunch
Verti Marte - is open 24 hours and has great Poboy's.
I would have on my food list - poboy, boudin, gumbo, jambalaya, beignet, and muffalattas, praline.
He also need to get a House Special from New Orleans Original Daiquiris.
