AmyG - I use sausage interchangeably for all "wursrt" - smoked, kielbasa, hotdogs, brats, etc.

I am terrible at meal planning but I am trying to get better and at least plan out a few meals at a time. My biggest problem is that I am slow in the kitchen and by the time I get home from work and nurse and change the baby it’s hard for me to put a decent meal together so we can eat at a reasonable time so H ends up cooking most meals. I think I’m going to try prepping stuff the night before maybe.
Anyway I am making tofu and green bean stir fry over quinoa tonight. Red lentil curry tomorrow. Maybe a fish and the rest of green beans one day and kimbab another. That’s as far as I can go.

Tonight..tortellinis, meatballs and garlic knots Monday..BBQ shrimp stir fry over white rice Tuesday..Hickory smoked turkey breast, mashed potatoes and corn Wednesday..Spinach mushroom chicken in a parmesan cream sauce, egg noodles and salad Thursday.. Breakfast for dinner Friday..Steak and roasted red potatoes

Tonight I made Greek chicken and veggies (cooked with hummus) and pasta salad. I made two huge pans so we would have enough to meal prep lunches for a few days.
Tomorrow- steak fajitas marinated in chimichurri sauce with rice and black beans
Zucchini lasagna and salad
Tomato soup and “fancy” grilled cheese

Tonight: BBQ chicken thighs and legs, macaroni salad, corn and watermelon Monday : goulash and salad Tuesday: (DH gone so just me and the kids) fish sticks, macaroni and cheese, green beans, peaches Wednesday: Shrimp and grits (new recipe) Thursday: I planned beef fajitas but I forgot I’m getting a tooth pulled and a root canal that morning so probably sending DH out for pho.
Lunch for me and DH will be cheese and salami plates with apples and grapes.

I finally bought the thug kitchen cookbook after checking it out from the library so many times so now I’m onto trying recipes I haven’t had yet. This week: Red lentil and white bean burgers with root veggie fries Tempeh and veggie peanut noodle stir fry Black bean tortas wth chipotle mayo 5 spice fried rice with an as yet to be decided protein Tortilla soup (which I’ve made several times and it is amazing. Seriously, thug kitchen tortilla soup. Get some) I need to get back to making and taking lunch but have no inspiration and generally don’t care for just a salad. I might cook up some veggie burritos for the week because I could eat a burrito pretty much all the time. I rely on leftovers a lot for lunch but then when I don't have them I make terrible choices. I do much better when I make a big batch of one or two things exclusively for lunches for the week. I also could eat a burrito pretty much all the time Oh, hi me.

with all the showings we had last week dinner was ruined/way late or just a no go, so this week super easy planned: I mean basically sandwiches and salad/veggies all week, so boring but easy! Sunday: Crockpot/salsa chicken and fixings for soft tacos or taco salad Monday: Turkey, ham, roast beef sandwiches with sliced veggies and dip Tuesday:Left over chicken tacos Wednesday: Chicken naan Thursday: Bar b q pork sandwiches, tater tots, sliced veggies

Probably throw in some veggies for the kiddo on a couple of those.
