Drip beef sandwiches Homemade pizza Bahn mi (mine as a salad) Chicken cutlets with potatoes and green salad
For lunches I'm doing Turkey taco bowls with cauliflower rice, cilantro, salsa, red onion, and avocado

Sunday : wild rice and chicken soup with homemade rolls. Monday : eggroll in a bowl with potstickers Tuesday : chicken fajitas with beans and chips Wednesday : butter chicken with veggie rice Thursday : leftovers Friday : homemade pizzas
SO said he wanted to start taking meals for his weekends away to save money and calories, so I’m also making a turkey zoodle dish, freezer breakfast burritos and a big chicken salad.

I finally bought the thug kitchen cookbook after checking it out from the library so many times so now I’m onto trying recipes I haven’t had yet. This week:
Red lentil and white bean burgers with root veggie fries Tempeh and veggie peanut noodle stir fry Black bean tortas wth chipotle mayo 5 spice fried rice with an as yet to be decided protein Tortilla soup (which I’ve made several times and it is amazing. Seriously, thug kitchen tortilla soup. Get some)
I need to get back to making and taking lunch but have no inspiration and generally don’t care for just a salad. I might cook up some veggie burritos for the week because I could eat a burrito pretty much all the time.

Monday- I think leftovers If not veggies and chicken breasts
Tuesday- pasta and sausage
Wednesday- chicken quesadilla and retries fries beans
Thursday general tso shrimp with rice and broccoli tofu for me

I can't decide on how to turn everything into meals instead of a random list of meat. lol.
I have petite sirloin steaks (buy 1 pkg get 2 free) so Steaks with one pkg and the other packages look more like beef cubes than steaks so... stew? or Chinese food? I have two boneless turkey breasts (buy 1 get one free) I have two whole chickens (buy 1 get one free) 3- 1 pound packages of hamburger several pounds of chicken breasts 8 hamburger patties so I guess hamburgers two nights brats pork loin chops pork chops (big package of rough looking ones but they were cheap) liver and tilapia
sigh I am not in the mood to plan out sauces, sides, how to cooks for these things. Anyone bored?

Menus:
Drip beef sandwiches with roasted carrots Orecchiette with turkey sausage and broccoli (Skinnytaste recipe) Frozen TJs chicken burritos with roasted corn
The first two recipes will give us leftovers, so this should get us through the week. Lunches for DH and me will be turkey taco meat with shredded lettuce and all the fixings.

Tonight I made chicken bacon ranch quesadillas (I basically did salsa chicken in my instant pot and shredded that for my quesadilla filling). Tomorrow will be either burgers or takeout depending on how late we get home from our trip to my hometown. The rest of the week in no particular order: Skinnytaste Sicilian rice ball casserole Meatloaf, mashed potatoes, and a veggie of some sort Shepherd's pie Chicken and loaded potato casserole And that's about as far as I've gotten. I may pick up a frozen pizza for MH and DS to have on one of the nights I'm working late this week.

Serve with rice pilaf one night. Repurpose leftovers as "chicken gyros" or atop Greek salad. - Texas chili - sausage and pepper sandwiches with potato wedges - parmesan crusted pork chops with orzo and spinach - does anyone do things with liver other than chopped liver or liver and onions? - No help with tilapia since I don't cook fish.

AmyG, if you want to change it up on a burger night, serve a hamburger patty on sliced roasted sweet potatoes, kind of open faced, with a fried egg and whatever topping you usually prefer. I also like adding crispy onion strings. Messy, but so good!

Liver may be the only thing I won't let H buy and there was a goat head in my fridge last week (I had nothing to do with it and it has to stay wrapped).

I probably should trim the quote tree but mobile makes that harder. Everything is on smaller packages except the pork chops thst are frozen already in a big pkg. I'll mske those one night when my oldest joins us for dinner and he can have the leftovers to take home with him. We kinda low carb for dh, so limited rice, potatoes, pasta and dumplings I have cauliflower rice but dh doesn't really like it. Also have super low carb flour may try chicken and dumplings. And have no carb pasta and maybe that will be spaghetti or chicken fettuccini. I don't think I'm as stuck on ideas of what to make As much as stuck on not wanting to cook. Oldest son that moved out lives to cook so I've been pushed back onto the kitchen to realize tgst I don't really like cooking all that much. Oops

Will probably do a beer butt whole chicken one night And a mini thanksgiving dinner with the turkey breast a week later. and let him smoke stuffs on memorial day weekend. Unless we have a cinco de mayo anniversary party and have a bunch of chicken and turkey tacos. But all of that is weeks away. I have to make it thru this week first
