I have basically no appetite and am totally uninspired to cook. But, I’m still down -11 lbs and I need to eat, plus I feel bad that my kids have been eating so much boxed Mac and cheese (usually a once a week thing), fast food or pizza because I can’t get it together.
By the time I feed them I usually end up eating a piece of fruit or worse, nothing at all.
Spam me with your easy meals, please!

We did shredded enchilada chicken over top diced sweet potatoes for dinner tonight. One of my current go-to easy meals. I have an instant pot, so I do chicken breasts, seasoning (salt, pepper, chili powder, cumin, and paprika) and a 10 oz can of enchilada sauce on high pressure for 18 minutes then shred. This could also be done in a crock pot. For the sweet potatoes, we always get the package of already-diced ones and roast that in the oven for 20-25 minutes. Serve shredded chicken over the sweet potatoes with sour cream, cheese, and guacamole. So good and it makes a ton!

Crockpot is my go to for easy meals.
Cream cheese chicken chili 1 lb chicken thighs (or breasts if you prefer) 1 block cream cheese 1 package dry ranch dressing 1 can corn (or frozen) 1 can rotel 1 can black beans
I don't drain the corn or rotel but I do rinse the beans. Put chicken in crock pot, cream cheese on top, ranch packet, then the 3 cans. Cook on low for 6-8 hours. Shred chicken and return to crock pot. Serve over rice/quinoa/noodles

Chicken pot pie (or stew)
1 bag frozen corn or about 2 cups fresh 4 potatoes peeled, diced, and cooked 1 bag frozen veggies or about 2 cups fresh 1 can cream of chicken soup (or make your own but I think canned is good 🤷♀️ ) 1 cup milk 1 chicken breast cooked and shredded Salt to taste Pepper to taste Garlic powder to taste Mined onion to taste (I don't measure my spices sorry) 1 can Biscuits
Put biscuits in oven. Dump in a big pot. Cook on medium/high heat until boiling, stirring occassionally. Switch to low for 10 mins or until biscuits are done.

i posted this once before on Jul15, but here are my most-used quick meal ideas: -spaghetti squash with your favorite jarred pasta sauce and ricotta/parmesan (cut in half, scoop seeds, microwave cut side down approx 10-15 minutes, or until tender) -egg noodles tossed with canned tuna, frozen peas, butter, and parmesan cheese -grilled cheese sandwiches with tomato soup -quesadillas (use up leftover meat and veg from your fridge). sometimes i make pizza quesadillas- use mozz, onion, pepper, pepperoni, dip into sauce. i also used to frequently make ones with soy chorizo (t joe's), spinach, and mexican blend cheese -dumplings + mixed frozen veg (toss with garlic, soy sauce, sesame oil)-- i get a big bag of each from costco. i get the veg mix in the black bag- i think it's called stir-fry blend - meatloaf muffins (i use ground turkey) - egg muffins-tuna melts -sometimes we do an "antipasto platter" dinner- cheese, olives, cherry tomatoes, roasted red peppers, lunch meat, and bread or crackers -veggie burgers with oven fries (reg potato or sweet potato). sometimes i do veggie burgers as a wrap- sliced up with lettuce, tomato, onion, ranch dressing, and hot sauce -tacos-- season ground turkey and cook, top with tomatoes, lettuce, sour cream, shredded cheese, salsa -breakfast for dinner- pancakes with eggs or bacon -loaded baked potatoes (prick potatoes, microwave for about 5 minutes, flip and microwave for about 5 minutes more, or until soft), top with shredded cheese, sour cream, chopped scallions, crumbled bacon, or various leftovers. an excellent combo is sweet potatoes with chili and cheese -reubens/turkey reubens -instant ramen (toss soup mix and use chicken broth seasoned with garlic/ginger if you'd prefer)-- poach an egg while the noodles cook, top with any quick-cooking veg you have-- ex. shredded carrots, spinach, cabbage, arugula -french bread pizza or english muffin pizzas- do it under the broiler -greek salad- mix in crushed pita chips so it's more filling. i also use a very generous amount of feta sides are either bagged salad or microwave steam-in-bag veggies if main isn't veg-heavy

Do you like chopped salads? This probably won't be something your kids want but I've been eating a bunch of those chopped salad kits lately. The ones that come with the toppings and dressing. They're so easy and I'm lazy.
I've seen a bunch of different kinds too. It'd be something that would be easy for you to make real quick and a good meal for you without much effort.

Instant pot almost every meal these days. I made chicken soup in it last night (cooked noodles separately), Japanese curry the night before. Threw in chicken, potatoes, and veggies with lemon juice and dill this past week too.
