H and I want to start planning meals to make ahead and fill the chest freezer for 3rd tri and after baby. What are your favorites for the crockpot, casseroles, or easy prep meals that all freeze well?

With DS I made breakfast burritos, the base for chicken and rice (enough for 3 meals), and stuffed shells.
Breakfast burritos: 2 dozen eggs - scrambled 1 lb pork sausage - cooked and cooled 1 green pepper - diced 1 red pepper - diced 1 large onion - diced A big bag of cheese Tortillas Foil
I just put all the toppings in a tortilla, rolled it up, wrapped in foil and then put in a Ziploc bag. It'd be easy to add/omit toppings but these are what I know MH likes and I made them for him to take to lunch.

chili: cincinnati, regular (i usually make w/ground turkey), vegetarian (eat by itself w/toppings or on baked potato/sweet potato; cincinnati- serve over spaghetti with cheese, kidney beans, chopped onions) bolognese sauce (can sub ground turkey)- quick to make if you chop all the veggies in the food processor. you can also add a package of mushrooms (chopped fine) to bulk up and make more sauce for less $$. lentil soup (can add sausage if you want) spanish style shredded chicken (freeze with a little of the poaching liquid so it doesn't dry out-- this is great for whatever- burritos, tacos, quesadillas... i've even made it into a creamy pasta sauce by mixing with jarred tomato sauce and half and half) frijoles a la charra (i make this with 3 cans of low-sodium pintos w/ their liquid) | black beans (i make with 3 cans of low-sodium black beans w/ their liquid- skip to last step) | green rice (or, shortcut version, finely chop 1 bunch of cilantro and 2 cloves garlic, stir into warm cooked rice with 1 tbsp butter) turkey meatballs (freeze in tomato sauce- homemade or jarred) after having had 2 summer babies, my strategy is somewhat different. none of us really want hot food during the summer (no central a/c), and so we eat a looooot of salads and sandwiches of all kinds. on the weekends if the weather is ok we grill a bunch of chicken breasts (simple marinade of olive oil, garlic, lemon juice, and oregano) and vegetables, and then repurpose them during the week for meals (pasta, tacos, quesadillas, salad, etc.).

DD was a summer baby and we didn't want to use our oven. We had hummus plates a lot (hummus, veggies, pita) for supper, simple things on the grill, and sandwiches

Maybe this thread will inspire me. For DD, my sister made us a cooler full of meals. I thought it was genius so I bought a freezer meals cookbook. Haven't made anything form it yet...
But she did things like meatballs, a chicken cordon blue casserole, etc. Some of it was so easy, like in a gallon size bag, she put chicken, sliced peppers and onions with some BBQ. All I had to do was dump it in the crock pot.

All I had to do was dump it in the crock pot. The cookbook is a good idea.
