I figured I’d post an update here. I may not have much ready, but in the interest of not starving I’m starting to put things in the freezer. This week I’m focusing on breakfast.
Whole wheat apple pancakes Whole wheat banana pancakes French toast sticks Whole wheat cinnamon raisin bread Cinnamon coffee cake

I really want to do some freezer meals but I don’t even know where to start. Do people mostly freeze already made meals or the raw ingredients to make for easy preparation? Or both, depending on the ingredient? I’m just thinking about creamy soups that have milk/sour cream and if they’d thaw and reheat well. Or soups with noodles. I need my mom, but she is still down with the flu a week later.

Gah I need to do this.
I did lots of crock pot meals last time, which went from freezer straight to slow cooker. There’s a bean supper I like, and a lentil chili.

I'm making things for dinner that will make extra to freeze. Like, I'm doing lasagna next week, and we would only eat maybe half of that so I can freeze the rest. Stews. Stuff like that. I'm not going out of my way to make separate freezer meals but am being mindful of portions to save.

I did a few things but ate them already. 😬 oops. We had jambalaya at a friend’s last weekend and she sent some with us to freeze, but we ended up eating it all for lunch/dinner this past week. 🙊

I skip the garbanzo beans because they're not my fave, and usually just up one of the other beans. I often sub maple syrup for honey. I make double or quadruple batches of it and freeze in gallon bags. It's warm and comforting and easy. I made all the French toast tonight. Used cinnamon raisin bread for sliced pieces and thick Texas toast cut into sticks for French toast sticks. Do you really think it’ll last until April??

Anyone have good advice about freezing enchiladas? There is such mixed advice about it on the googles.

I either keep cans of sauce in the cupboard or I put it in a ziplock bag in the freezer with the enchiladas.

shadesofgold I freeze them unbaked but I leaned the hard way that you must very lightly fry your tortillas first. I may be the only person that thought I could do it without.

so far i all i have managed to get done is banana bread and a giant skillet chocolate chip cookie🙈 priorities right? in all seriousness, i plan on just making extra and freezing leftovers in the next few weeks. also breakfast burritos.
