I'd really ideally like to have a couple of weeks worth of freezer meals and other pre prepared things ready to go for after baby gets here. I'm thinking I'll likely invite a couple of friends over for a prep day a little while before I'm due. Are you doing this? What are you making? What would you make? The only thing I can think of right now is cut up and seasoned fries (I make mine from scratch). We usually eat pretty healthy, so I feel like that makes it a tiny bit harder.

We're moving six weeks after this baby so no freezer meals for us this time. Normally I'd make and freeze a bunch of cooked, seasoned meats. Shredded beef and chicken mostly. Add some frozen veggies and done. Chili is good too. And breakfast food - freezing waffles and pancakes and breakfast sandwiches.

I made a few but people kept us fed for almost the first month after O was born. I did make a ton of muffins to freeze and I plan to do that again. I'll also make a bunch if lactation cookies because nursing makes you ravenous.
Do not, do not make frozen meatloaf. Just don't do it. It was not good. I make killer meatloaf but freezing it is a lie.

I'm not planning to because many reasons but I helped my BFF make some before her baby not that long ago. We did lasagnas, sweet potato black bean filling for burritos, chili, and enchiladas (cheese/tortillas and sauce frozen separately).

I don't think I'll make full on meals. I've managed previously without & got back into my cooking game fairly quickly because it's something I enjoy and feel normal doing.
I do plan on making a couple gallon sized bags of crockpot oatmeal dry ingredients so we can just add the liquid the night before and wake up to a couple days worth of breakfast, since breakfast seemed to be our most difficult meal in the beginning. I keep assorted mix-ins (dried/fresh fruit, jams, chocolate chips, etc) on hand.
Muffins would be handy, along with lactation cookies, which I enjoyed last time.
Otherwise, I'll keep doing what we normally do: grocery shop on Sundays and prep for easy snacks and to make meal cooking easier.

I don’t think that we’re going to do freezer meals this time. By May, we can use the grill, which is easy enough for either H or I to do, and now that I have my instant pot, it just seems like it won’t be as necessary.

I know my mom is going to be coming up to help for the first month or so, but how my parents eat is a lot different from how H and I eat, which is why I want to put some stuff together, so I can make sure that we're still eating the way that we prefer =) I'm going to start making a list and cleaning up the freezer so I can get an idea of how much I can make.

H randomly came to me this afternoon and said he'd rather me not make freezer meals this time. He said that he'll smoke a bunch of meat to freeze then we can use it to cook. Fine by me!
I know when I made the freezer meals last time it took me an entire day to just make the food.

The last thing I wanted to eat after having a baby last time was the stuff in my freezer I had made months before. Some of it was really good but I would rather make sure my fridge and pantry are stocked for quick meals.

Last time I made grocery shopping lists to H and he also picked up ready to eat meals at whole foods and we were fine. This time we might have his mom come to help with DD1 so I am sure she will be cooking/helping with chores.

Muffin tin frittata
Eggs Frozen hash browns Prepare whatever you want as fillings (I’m a fan of Italian sausage & spinach, DH likes bacon & cheese, my bff likes breakfast sausage and garlic and chopped bell pepper) - all should be cooked
Preheat oven to 350°F
Use a silicone muffin tin or a well greased muffin tin.
In a bowl, beat as many eggs as you want muffins.
Assemble in each cup: Frozen hashbrowns (I like to salt and pepper these) Fillings heaviest to lightest, omit cheese if using Pour eggs to cover fillings or dill muffin tin Sprinkle cheese on top if using.
Bake 30-40min or until set and browned. Let cool completely before putting in freezer or they’ll get soggy.
Reheat in the microwave or oven.

I mostly ate freezer meals at lunch for just me. (Excepting those frittata I said above- those were breakfast, snack, whatever.) So any freezer meals I make will be me & one toddler portion. And if we get in a bind and want for supper, I can always thaw two.

I did a bunch of freezer meals last time and would like to do a few this go around. I enjoyed having a few nights a week I didn’t need to stress about it especially once people stopped brining food and your on your own. Last time I did a Wild Tree Freezer Meal workshop and I loved those recipes but I will probably just do my own this time

I don't remember what I ate for the first couple of weeks postpartum, but I think it was just easy to fix stuff (canned/boxed foods) or fresh stuff (fruits/veggies, sandwiches, salads). Same plans this time around.

All of my freezer meals were gross and we threw them out. I'd only do soups or meat sauces and the like.

H also cuts in summer but has more realistic expectations after having a newborn once 😉 That is why he wants to make ALL the protein. He keeps mentioning cutting and I'm like "I feel like a whale but watch me drop 25 pounds at the end of May."

We did run into a local deli/butcher market on our way home from the hospital with #2. We loaded up on sliced lunchmeat, some premade foods, salads, and actual meats for grilling, plus chips, veggies & easy to grab stuff they had. The owner, an older Italian grandpa type, kept adding things into our cart and then gave us a MASSIVE discount because he was so tickled to be her first stop (we actually shop there weekly for our meats & lunch meats). We'll probably end up doing similar this time around.

He's been cooking up batches of ground beef and chicken breasts already and putting them together with his rice and beans and veggies in tupperware. The only thing that I do for him is put the rice and beans on to cook in the rice cooker :-)

Soups are great especially since it's easy to double then freeze most of it. Pulled pork, browned beef for tacos, and spinach and artichoke dip work well too. I freeze most leftovers I have - just not anything with lots of pasta. I'm also all for lots of easy meals when they are needed - frozen pizza, Bertoli, and spaghetti are all things H can do on his own.
