Well, my meals did not go as planned last week. MH took over, which was good, but we definitely we're on the same page LOL
So I may have some repeats this week since they weren't made last week.
What do you have on the menu?

Sun - MH and I ate an early dinner; J had leftovers
Mon - Probably leftover pizza, pasta, veggies... whatever's in the fridge
Tues - Breakfast for dinner ~ Either veggie and cheese quiche with a salad, or pancakes with fruit and sausage
Wed - Summer sausage with veggie rice and a salad
Thu - Pasta (veggie noodles for me) with either pesto and chicken or red sauce and meatballs, and a salad
Fri - Leftovers, or burgers and sweet potato spirals and grilled zucchini
Sat - Spaghetti dinner at a local fundraiser
Sun - Pizza and birthday cake for my niece

I have basically fallen off the meal planning wagon since we finished our W30. I need to get myself together!
Sun - Burgers & dogs with my family to celebrate my dad's birthday Mon, Tues, Wed, Thurs - ????
Fri-Sun I'll be at the beach with my girlfriends. Best wishes to the rest of my family.

S- We had the best oven fried chicken. I combined a couple different recipes to make it, and it turned out well! M- takeout, TBD T- chickpea tacos W- pan-fried tenderloins with mashed potatoes and green beans Th- Chicken fried cauliflower rice F- pizza for the boys, macaroni made with Banza pasta for me S- leftovers S- Oven fried chicken, roasted potatoes and carrots

hawkward and anybody else, talk to me about cauliflower rice. I see it in the store, but I'm hesitant for some reason. I love cauliflower, but MH doesn't. Does it taste like rice? Basically, can I seamlessly make the transition from rice to cauliflower?

hawkward and anybody else, talk to me about cauliflower rice. I see it in the store, but I'm hesitant for some reason. I love cauliflower, but MH doesn't. Does it taste like rice? Basically, can I seamlessly make the transition from rice to cauliflower? I like it all the time, but I really like cauliflower. H is not a fan, but he'll eat (and enjoy) it in fried rice because the soy sauce completely masks any cauliflower flavor. It's a decent sub for the texture. I think my best tip is to serve it with something with an otherwise strong flavor profile, like stirfry sauce, soy, or even the spices for Spanish rice rather than just plain. DS1 HATES rice and loves cauliflower rice. www.skinnytaste.com/cauliflower-fried-rice/ is the recipe I use (plus I add chicken). If I need to throw together dinner quickly, I use frozen pre-riced cauliflower and shred a rotisserie chicken, and it takes about 15 minutes from start to serving.

MH has weird texture issues, like he compares ricotta cheese to coffee grounds. Okay, H, okay...
Maybe I'll try it this week. I mean, the man bought into sweet potato spirals last week so *maybe* this is my window of opportunity! LOL

Maybe this will help me stay organized and get me out of some of the cooking ruts I've gotten into
Sun: slow cooker whole chicken, baked potatoes, and veggies
Mon: homemade chicken nugget/tenders, fries, veggie
Tues: chicken fried rice using leftover chicken from Sunday
Wed: sloppy pasta (essentially sloppy jo with added veggies and put over pasta instead of bread)
Thurs: chicken stir fry with rice
Fri: eat out
Sat: bbq chicken and/or salmon, corn, and fries

Sent from my SM-G930V using Tapatalk I was really intimated by the idea of making my own as well, but if you cut it off the stem and into small pieces you can toss it in a food processor and it is SUPER easy!

Late but here! I have the main timings planned and am winging it on sides this week.
Spaghetti with veggie side
Turkey Italian sausage with sauerkraut and a veggie
Turkey meatballs with sides of some sort Leftovers until I have to shop/cook again!
