Recommend your favourite recipes for a weeknight dinner. I'm in search of something quick and easy that doesn't require a lot of prep. Thanks!

Turkey sausage and peppers with rice
2 packages turkey sausage (I use hillshire farms smoked turkey sausage) 3 green bell peppers 1 orange bell pepper 1 yellow bell pepper 2 yellow onions 1 bag of Success boil-in-bag rice
Slice sausage at an angle about 1/2" slices. Cook on medium high in a skillet until starting to brown.
Thinly slice peppers and onions. Add to sausage and cook until they start to caramelise. 15-20 minutes.
Boil rice and add to skillet, mix in thoroughly. Let flavors combine for about 10 minutes. Enjoy.
If you're in a hurry you can skip browning the sausage and have the onions, peppers and sausage cook all at the same time. After about 20 minutes, boil rice.
Total time about 45 minutes.

I really like stirfries for this because you can use whatever you have on hand.
1. Heat oil in a large skillet or wok over high heat.
2. Toss in meat. Sliced chicken, pork, or steak. Ground beef or pork. Tofu. Whatever you've got. Cook until cooked through.
3. Toss in vegetables. Whatever you have. Vegetables like carrots and onions are good to throw in first for a couple minutes since they take longer to cook. Then things like mushrooms, peppers, broccoli, beans, etc. Give those about 3 minutes. Then if you have things like peas or spinach, throw them in for a minute.
4. Add in sauce. My favorite right now is 2 cloves of garlic, minced + 1tsp lemongrass paste + 1 tsp minced ginger + 3 Tbsp soy sauce. Cook for another minute, then serve over rice

Pesto pasta
Penne noodles 1 jar pesto sauce Shredded mozzarella cheese Cherry tomatoes (cut in 1/2) Cucumbers (cut into small pieces) *optional- shrimp or chicken
Boil noodles and drain. Rinse with cold water to cool off. Add all other ingredients and mix together well.
*Total time about 20 mins
I actually prefer it the next day once it's chilled in the fridge overnight. I normally make it on Sunday night and then eat it for lunch or dinner the next day. I like this pasta for summer because it's not hot and it's really quick.

We used to saute a can of kidney and black beans, bell pepper, jar of salsa, can of green chilies, some times onion. Then we would just put it in tortillas or on a bed of lettuce with sour cream and cheese if desired. Easy and really filling.

This is a great kids meal and can be done with any hamburger buns, rolls, or French bread. Lay halves face up on baking sheet in oven @350°F to crisp. Remove and cover with pizza sauce. Layer sausage crumbles or chopped deli ham, cheese and then pepperoni. Put back in oven until meat is heated and cheese is melted. These are ingredients I usually have on hand but this obviously can be customized with whatever pizza toppings you have/like.
For other quick sandwich meals I sometimes buy canned chicken or boiled eggs and make chicken or egg salad sandwiches(chop and add mayo and pickle relish and/or whatever you like) in the summer.
[HASH]sheetpan Meals are easy and quick. You just cube everything, toss with oil and seasoning and bake for about 30 min, stirring once or twice in between. Some ingredients take more time to peel/chop/prep than others. Just search "sheet pan" on Pinterest. There's "sheet pan meals", "sheet pan suppers", "sheet pan recipes", "sheet pan chicken blah blah blah" etc. The one my mom always made was chicken, carrots, onion and potatoes with olive oil and seasoned salt. My SIL does sausage instead of chicken. I've used dry ranch or Italian dressing mix packets instead of seasoned salt. Two I'm wanting to try are "Shrimp Fajitas" and "Hawaiian Chicken".

LBB wants me to recommend his favorite meal - you make a pot of pasta. Then add butter. Cheese if your mom insists there's not enough protein in just pasta with butter.

Similar to the above sausage recipe but even quicker:
Sausage 'Casserole' (because my H jokingly insists that anything cooked together at once is a casserole)
1 package precooked chicken apple sausage 1 bag microwave broccoli 1 90 second instant rice package Cheddar cheese to personal desire of gooey
1. Slice sausages into coins 2. Brown sausage in skillet over med heat, stirring often. 3. Partially cook broccoli in microwave, I usually did about 3 minutes 4. Add broccoli to pan. 5. Cook rice in microwave. 6. Dump rice into pan. 7. Remove from heat, stir in cheese.
We ate this at least twice a month when DS was itty bitty. Have also used peppers, green beans, peas, corn, and probably other things as the veggie.
Start to finish 15 minutes.

Also fajitas are so easy and fast. Slice meat and veggies, saute in olive oil, add seasoning and cook until done. Then put stuff into tortilla.
Total time: 15 minutes

I love flat bread pizzas; I use FlatOut wraps, one for me, 2 for H, shredded cheese, can of Hunts tomato sauce w/ basil and garlic, whatever toppings and bake at 350 for about 20 minutes.
