I have a farmer friend who's egg business is mainly in the winter, when other farmers don't have eggs. But her ladies obviously do a lot of laying through the summer and I've been trying to help her figure out what to do with her excess summer eggs. I'm developing a Maple Lemon Curd for her, but her hens are outputting about 1,800 eggs per day, so she needs more ideas. What are some egg-heavy products that you would buy from the store? Flan? Custard? What else?
For those of you who don't know me, I own a bakery in Vermont, so it's not weird for me to know someone with a 2000ish bird flock of laying hens. I figure that I would post this here instead of my home board (Cloth Diapers) because I think that APTM should have a rocking food board.

Ice cream! Although that's just yolks. Angel food cake is whites. So maybe divide between the two products?

What about quiche? You could sell them in the bakery for people to heat up at home. DH and I are originally from Vermont. Where is your bakery?

Suggestions: Quiche, homemade pasta/noodles, custards & custard bases for ice creams, pound cakes, breads like challah or brioche.
I know you can freeze whole eggs if you crack them first, but I have had more luck with freezing them separated. I just used thawed frozen egg whites for meringue kisses this week and I could not tell the difference between frozen & fresh egg whites.

I've been in business since 2004, so as long as you travel in the specialty food world (vs supermarket) you've likely come across my stuff.

I'm sure my mother in law has then because she was part of the co-op in Montpelier and definitely loves farmers markets. I haven't lived full time in Vermont since '01 and then it was in Burlington.
